Zarate

"The history of Zarate is that of a man passionate about fishing and the sea, to the point where he has been able to reinvent himself – a process that included adding a gourmet fish shop to his existing restaurant.Chef Sergio Ortiz de Zarate started his career in Lekeitio (Vizcaya), where he began to make a name for himself thanks to his superb baked wild fish. His traditional cooking gained further recognition following his move to Bilbao and a widening of his repertoire that involved more modern dishes and a focus on locally sourced ingredients. The strong guiding principles of Zazate are undoubtedly based around his exceptional knowledge of fish – Cantabria’s finest raw ingredient that he sources daily from the ports of Lekeitio and Ondarroa." - Michelin Inspector

It's not easy making last minute reservations at Michelin-star restaurants. I managed to get one here, at the Chef's table, and was quite happy with the dinner experience. When you're dining alone, it's actually more interesting to be able to watch the action in the kitchen. I chose the gastronomic menu which features fifteen dishes. I am a raw seafood lover but wanted to try something different. The dishes were rich in flavor and texture, some flavors of sauces/condiments surprisingly strong. Fortunately, I had chosen a very fresh wine which helped counterbalance. The two desserts were a delicious surprise! The service was very fast, at times even too much so. Initially, I thought it was because I was dining alone and not talking, but then noticed a couple in the main restaurant was exaxtly at the same pace. The waiting staff lacked some professionalism (which can be improved by training) but I felt they were all genuinely kind persons - and kindness goes a long way with me. So, overall, a very enjoyable evening and I'd happily dine here again on a future trip.

We went for the 10 course fixed menu for 100 euro per person. The food was ok. 2 of the dishes were Michelin star level of cooking. 2 were extremely salty and inedible. The remaining 6 were mediocre and unspectacular. The service was ok-ish, but we did have better service in non Michelin start restaurants the previous 2 days. The waiters barely spoke English and outright could not advice in a y language what the ingredients of the some of the dishes were. No non alcoholic drinks were available other than water and coke... Overall definitely not worth the price. Would be ok for 50 euro per person.

We had the 10 course tasting menu with matching wines. Highlights were the anchovies, the octopus dish that captured the essence of octopus in a soup/gravy, the Sushi grade tuna. Biggest surprise and delightful was the fish French toast. Words cannot describe it - you've got to experience. Service was excellent. Christina from Ecuador and Antonio from Peru took very good care of us, and explained very well each plate and the wine pairings. Wonderful experience.

Very good and worth trying for a special night out. The server was a little awkward, though, about accommodating my partner’s request for a fully pescatarian meal. Only strange because this place advertises itself as a seafood restaurant.

My favourite gourmet restaurant in Bilbao, which I try to visit once a year. Very fresh produce, allowed to take the center stage, with gentle cooking styles, sauces and condiments. This is true basque cuisine with a very slight innovative touch (helps maintain the Michelin star 😉). When in season try the large quisquillas and the angulas. The service is very genuine, professional and attentive.

An unforgettable experience. Every dish was a story on its own, you can see the creativity of the chef and the love for the product itself in every dish. and the service was excellent. As a bonus to top it off we also got Sergio’s comic cooking book which we forgot in the restaurant and Sergio himself send it to us in Barcelona!! Amazing restaurant , amazing people. We will definitely be back!

Don't hesitate one second just book your table, go & enjoy serious basque cuisine cooked to perfection. Indulge into the unique experience of the Chef's table. Loved the idea of sharing several starters that were served individually for each guest.Thank you Chef

We came to the restaurant with my husband on his birthday. I have never seen such a terrible discussion anywhere. The expectations of a Michelin-starred restaurant were much higher. When we arrived, the restaurant was completely empty. We waited for the menu for 15 minutes, they didn't tell us anything about the cuisine, dishes. The staff did not smile once. The food was interesting and delicious.
