Where to Drink Real Cider in Basque Country - AFAR

"Founded in 1942 by Joaquín Gaincerain and now run by his three granddaughters, this stone-walled farmhouse sidrería opens only for txotx season (January–April) and remains firmly traditional: cider is tapped from barrels with the escanciar pour and left unpasteurized, unfiltered, and free of added sulfites so it keeps developing as a living product. Guests stand on sawdust-covered floors with no chairs or plates, drink a single crystalline sip called a culín then discard the remainder, and eat from communal trays piled with country fare—steak, olives, cheese and jellies—while locals wait hours shoulder-to-shoulder, sing, toast and refill their glasses through the night. The result is a convivial, rustic atmosphere and a cider experience that can range from a bright, tart, green-apple first sip to a more mellow, barnyard-spiced profile as a barrel ages." - William Bostwick

Amazing amazing experience in this cider place! Highly recommended. The experience is awesome and the place is very cool. They have different cider types that you should try and in very basque experience, if you go in season (I believe January to March more or less) you can get to be you glass filled directly from the barrel. So cool! Food is really good and pricing is in line with quality. The menu is classic cider place menu, with limited amount of items that you can remove if you don’t want one of the things. Check the menu before going to make sure you like what a cider place offers. Again, food is great and experience is fantastic. Also the staff is very friendly.

This was the best experience we have ever had while visiting the Basque Country. Zelaia is a fantastic Sidreria where you are taking care of and you can tell they want you to have a great time. The sidra was outstanding, you can fill up from so many different barrels and if you find one that you really like, you can also just ask when you go back for more to refill from that barrel. All of the food during the txotx was incredible, but the star of the show is the txuleton. My wife and I will never be able to eat another steak again because of just how incredible this one was. If you have the ability to go to a sidreria in Donostia, Zelaia will not let you down.

This place was a really good choice! Food was excellent and plenty, cider and atmosphere is also very good. Its pricy, but i was happy to pay for such a good service and food. They speak english, easy to acces by bus (A1/A2), and reservation system works as well.

Fantastic dining Basque experience. Sidrería menu comprising of chorizo cooked in cider, cod omelette, cod with peppers, followed By amazing t bone steaks and to finish quince and cheese! 🧀

This Family run Basque Cider house is only open about three months out of the whole year (for 2011, Jan 21-Apr 30th). But if it is open, and you're anywhere near San Sebastian, make a reservation and GO! I don't want to give too much away about the experience, but suffice it to say that this visit was one of the most fun of our trip so far. Super friendly folks, and as far as we could tell, we were the only people there who weren't longtime friends of the family. They've had the cider house in the family for something like 40+ years. They seemed so surprised to see us that they asked how we ended up there... In any case, it was definitely an evening that will be one of the highlights of our trip. I can't wait to go back! Txotx! (note that Zelaia is in Hernani just south of Astigarraga...about half an hour from San Seb)

This was a culinary experience like no other. This cider house in Basque Country is one of the finest. Just having the cider poured directly from an old wooden cider vast to your glass is unreal, and as good as it gets. Yes, the cider is excellent, but we can of forget about the food. A series of courses that come at an un-rushed pace make a great compliment to this whole experience. It all starts with some chorizo and freshly baked bread. Then you make sure to get more cider, and you will receive the tortilla de bacalao. This fish tortilla is incredible good, you cannot even know there is fish, just this amazing flavor that you try to guess bite after bite. Then you will have an amazing roasted cod with peppers and some finely sliced lightly battered fried onions. In case you still hungry, a very thick piece of rib eye is on the way, no worries. This beautiful cut (called chuleton) and grilled over open flames from charcoal is done just perfectly. Meat here are all grass fed, so no need to talk about quality. And of course you would have been going for more cider. Make sure you take your time and watch your pace, it is not a race. This experience may take a few hours, it is up to you. At the end, you will have some sweets your ways. You will experience some sort of butter cookies with membrillo and Idiazabal cheese. This was an outstanding experience, and very reasonable priced. If in San Sebastián, this place is a visit that must be done. Oh, before I forget, the service was excellent. The waitress staff was always making sure we were happy and well taken care of.

An unbelievable dining experience outside of San Seabastian. Enjoy the family drink, but pace yourself with the locals - you'll have more fun singing songs. Napkin back pocket. Fork at the table, Sudra in one hand, other in your pocket and you'll blend in nicely. Great steaks (oxen) and even better people.
