Zuara Sushi

"One of the most interesting sushi bars in Madrid and one with a certain pedigree, given its location in the premises where DiverXO began its stellar rise. The minimalist Japanese ambience is evident in the dining room where a typical U-shaped counter takes centre stage, showcasing David Arauz’s impressive "Itamae" sushi skills. His cuisine is fully respectful of Japanese techniques while remaining loyal to Spanish ingredients. Choose between two appetising menus (Zuara and Shibui), both of which highlight an innovative touch, successful umami flavours and include superb nigiris in which the rice is cooked to perfection (a firm texture but which melts in the mouth). The name of the restaurant is in fact a palindrome, as it is the chef’s name spelt backwards!" - Michelin Inspector

I had an incredible dining experience at Zuara Sushi, a Michelin-starred restaurant in Madrid. From the moment I entered, I was impressed by the elegant ambiance and the warm welcome from the staff. The highlight of the evening was watching the talented team of five or six chefs meticulously prepare sushi right in front of us. This unique setup allowed us to appreciate the freshness and high quality of the ingredients. Each dish was expertly crafted, and the chefs provided detailed explanations in both English and Spanish, enhancing the overall experience. The variety of sushi was impressive, with each piece showcasing creativity and attention to detail. Zuara Sushi also offers an excellent selection of top-quality caviar, which added an extra touch of luxury to the meal. Overall, Zuara Sushi provided an unforgettable dining experience with exceptional food and service. I highly recommend this restaurant to anyone seeking an authentic and interactive sushi experience in Madrid.

The best omakase experience in Madrid! Great produce and technique with a creativity touch. Order the caviar supplement! A must stop for sushi in the city!

Excellent sushi bar in Madrid. If you managed to go to Sushi Ko before, you'll feel right at home. Classy, cozy bar, excellent service and great omakase experience. Nice starters all around. I especially liked the fish made in the robata. Then the nigiris are really amazing, especially all the toro variants. They are on the higher end of wasabi, so I'd ask them to use a bit less if you don't enjoy it. It has a few extras that you can order when you reserve. The toro nigiri with caviar is great, and so is the toast with caviar to share between two. The menu is fairly long, so I'd be careful not to order everything. As with any high-end sushi bar, it's on the expensive side, but it's a very enjoyable experience.

One of the best sushi experiences in my life (and I've had a few excellent ones). Chef Arauz and Carlos were extremely personable and attentive. The attention is on highlighting the fish. Great sake (take the maitre d's suggestion, he's very knowledgeable)

If the menu was maximum 100 euros and perfect service I wouldn’t be writing this comment. But sadly I do not recommend it, the food is indeed great, quality and freshness. The chefs try their best to explain each and every dish. You eat with all the clients at the same time, I went alone to experience this restaurant and have a treat. The pompous Sommelier, Clearly did not like that I am not going to order any wine. His demeanor during my whole experience left me uncomfortable, whilst the 2 other ladies serving us in sport sneakers clearly need some hospitality skills. We had to force them to smile or feel welcome. The head chef supposedly the best sushi chef in Spain was nowhere to be seen. I don’t know what to make of this place, even though the food is great, but €180 for this menu, I’d rather go somewhere else. There are plenty other sushi restaurants in Madrid.

We came here for lunch after a Chinese friend of mine had done some research on the best sushi places in Madrid. We absolutely loved it! We did enjoy the Spanish interpretation of classic Japanese food although we felt that the smoked rice often times overpowered the delicious produce it was served with. The grilled edamame was certainly a nice touch. Service was kind and attentive and the atmosphere just right. It was certainly a fantastic experience.

Good service, friendly and very attentive. There was just a sole menu option(shibui) despite the website indicated 2 menus (zuara and shibui). Quality of raw materials and the way of preparation was excellent but at an exorbitant price. Price you pay (165eur) it is much greater than it should be. Wine list is fine but again at ridiculous price level. You must love wasabi, since it is in all sushi served! There is no option to have sushi without it. At any moment the chef “itamae” ask for dietary restrictions or what you like/ dislike. I think requesting no wasabi for sushi and sashimi is perfectly acceptable and not rude at all. I missed the type of personal attention.. Being flexible could have improved our overall perception of the food quality.

@zuarasushi is one of the few exquisite @michelinguide starred gastronomic experiences that Madrid has to offer. From the outside one may easily miss this abode of world class sushi because of its simple and understated entrance. Walking in there is a sense of natural calm and a Zen temple like atmosphere. We are walked to our seat by an incredible team of hosts led by the world renowned sommelier @prietoalvaro.
