Returning to Zum Weißen Rauchfangkehrer on our third visit to Vienna felt less like dining out and more like coming home to a living chapter of Austrian culinary history, which founded in 1848, as this remarkable house stands as one of Vienna’s most enduring guardians of authentic Austrian cuisine where tradition is not preserved behind glass, but lived, cooked, and savored daily.
From the moment you step inside, the atmosphere speaks quietly yet confidently. There is an inimitable warmth shaped by centuries of stories once frequented by chimney sweeps who were anything but selective eaters, often wandering in from the neighboring bakery, drawn by honest food and generous hospitality. That same spirit still defines the restaurant today, enriched by a beautifully stocked cellar and a philosophy rooted in organic ingredients and sustainable cuisine, a commitment rightly acknowledged by the Michelin Guide 2025.
Our culinary journey began with the sweet potato soup, smooth and comforting, offering depth without heaviness. The cream of mushroom soup followed earthy, refined, and perfectly balanced, a testament to how simplicity, when executed with care, becomes elegance.
The centerpiece was the legendary Rauchfangkehrer’s Viennese veal Schnitzel nothing short of exemplary. Golden, impossibly light, and masterfully prepared, it embodied everything a true Wiener Schnitzel should be, crisp, tender, and utterly timeless.
Equally impressive was the creamy emmer grain, paired with green Hokkaido pumpkin, spinach, and Bleu de Brebis cheese. This dish stood as a contemporary expression of Austrian cuisine thoughtful, sustainable, and deeply satisfying, bridging tradition with modern culinary sensibility.
