Probably a top three meal I’ve had in Japan. Incredible food. The staff and chef, while not very proficient in English, tried their best and were genuinely kind and professional. The ingredients were top notch, and the wine pairing was excellent. I’ve never had a sake experience quite like this.
If I had to offer criticism, it would be on small details.
The potato purée felt starchy and, to me, lacked the best texture and mouthfeel. It also wasn’t rich enough in terms of butter and cream. The shabu shabu dish overall lacked flavor in my opinion. I found the cold porridge at the beginning unpleasant in both texture and taste. I also think the concept of choosing your final dish is cool, but it might work better if the choice were made for you, or at least if repeating a dish wasn’t an option. When I ordered the sandwich again, I expected a different cut or some variation, and when it was identical, I was slightly disappointed. I say slightly because it is extremely delicious regardless.
These are very minor complaints within an incredibly consistent and wonderful experience.
