I recently had the pleasure of enjoying a delightful Kaiseki dinner at Inflorescence, and it was truly an unforgettable experience. Nestled on a hill, the restaurant boasts a stunning Japanese-inspired design that exudes tranquility. On the evening of my visit, the wind was brisk, and the chill in the air only added to the cozy atmosphere. As I stepped onto the spacious terrace to watch the sunset, I was serenaded by the gentle chimes of traditional bells, which created a serene backdrop for the evening. The view was breathtaking, and it felt like a perfect moment in time. The service at Inflorescence was nothing short of superb. My server, Tan, was exceptionally kind and made an effort to communicate in English, which I greatly appreciated since I don’t speak Mandarin. Tan provided detailed explanations for each dish, enhancing my understanding and enjoyment of the meal. It was clear that all the staff were genuinely warm and polite, contributing to a welcoming environment. Now, let’s talk about the food. Each dish in the Kaiseki meal was beautifully presented and meticulously crafted. The ingredients were sourced from Japan, Australia, and other regions, ensuring a fresh and delectable experience. The wine pairing complemented the meal perfectly, elevating the flavors and making each bite even more enjoyable. Overall, my dinner at Inflorescence was a remarkable journey for the senses. From the stunning ambiance and attentive service to the exquisite food and wine, I left feeling completely satisfied. I highly recommend this restaurant to anyone looking for a memorable dining experience! It was too bad my mom was ill and could not make it, but I definitely plan to bring her here in the future to try it for herself.

This is probably my top rank restaurant in Taiwan. The whole dining experiences was excellent from the architecture, landscaping, scenery view from the deck, service, server’s personal touch to food presentation and quality. This is the best restaurant that I have tried so far in Taiwan. I am very impressed by the owner and the team’s effort to make impossible to be possible! Will definitely coming back again and also bring my parents over. Looking forward to the new hotel rooms to be opened to public and will book my stay here next time as well. The only dish needs improvement is the dessert. Little be too sweet and creamy.

One of the best places to dine at, the restaurant design is extraordinary with so many details and thoughts. Even to maintain the environment takes a lot of efforts. Brings to another level of experience in Taiwan. The food is quite good, I like how they prepare the leftover rice for you to take home. I would love to come back soon again.

The setting has a nice ryokan feel and the view is gorgeous. There’s quite a bit of detail and investment into the space and architecture. Regrettably, the restaurant had no plan on integrating any of that with the dining experience. There was a tea room that the guests could not access. Really all it was was for the guests to roam around and for the staff to help take selfies. The course meal was a mix of Japanese, Taiwanese, and western ingredients that leaned a bit too heavily on western ingredients. The dishes were generally solidly executed and used high quality ingredients, but they were at times out of balance and the flavors didn’t quite come together. Adding large slice of butter to what was meant to be a rustic soup was overboard. The portion control was also very lacking. The dish portions were way too much, and all the guests from our party had difficulty finishing the meal. The service was overall solid but with too much salesmanship that was unnecessary and a bit distracting.

A lot of efforts to build a restaurant with this surrounding and ambience. Did enjoy the food and the excellent service. Really appreciate the detailed introduction to each dish. However, after driving up all the way up to this secluded area, I would have enjoyed my meals a lot more if we were not surrounded with other guests in a large room, felt like having dinner in a cafeteria. Worst was the long bench we sat on for three hours had no back support and the uncomfortable feeling was very distracting.

Inflorescence is one of the most popular restaurants in Taichung which was hard to get a table when it first opened. The decor is artsy and well-planned with zen ambiance. Every corner of Inflorescence is photo-worthy. We had their winter menu which fully utilized local ingredients that are in season.

This is a most beautiful setting for an awesome kaiseki meal, thanks to me godsister! We had a lovely time with family and the food was excellent as well as the wine pairing! Highly recommend eating here if you’re in Taichung!
