"Le Musée is a 20-seat fine-dining restaurant in Sapporo, Hokkaido, run by chef Makoto Ishii. The restaurant revolves around the terroir of Hokkaido, with a menu that changes based on the seasons and the transition periods. Chef Ishii believes in respecting the pure taste of produce and presents a degustation menu that uses different tastes and textures to give guests rhythm and tempo. The restaurant features dishes such as potato croquettes with hazelnuts, black olives, anchovies, black sesame, botan shrimps, yuzu espuma, caviar, flounder with lush greens, and Scottish halibut with asparagus puree, spinach kombu foam, rocket leaves, and dill.
