"I head to Prospect Heights to sample some of the city’s best Ethiopian — which just so happens to be entirely vegan. Opened in 2020 by husband-and-wife Romeo and Milka Regalli to showcase family recipes, the restaurant offers a modern, meat-free take on the cuisine: injera nachos topped with a housemade berbere cheese sauce, black beans, guacamole, and pico de gallo; tibs made with mushrooms or seitan; and platters of stews and stir-fries served with rice or injera, the spongy teff flatbread that’s naturally gluten-free. The mac-and-cheese side comes in a wee skillet and there’s a French-toast brunch special too — food here is best shared, though you can get a sampling on a platter if dining solo." - Kyle Beechey
