"After weeks of invite-only dinner service and a social-media contest for sneak previews, this much‑anticipated omakase sushi restaurant debuted in the Bywater on February 12. Marketed as New Orleans’s first omakase sushi bar, it’s a tiny 12-seat counter at 3214 Burgundy Street run as a partnership between Tokyo‑native chef Kazuyuki “Kaz” Ishikawa, his longtime partner Eli Ramos, and local restaurateur Billy Blatty. Reservations are only available through Resy and the initial seatings booked quickly through early March; the team has been running friends-and-family previews and social-media seat giveaways to test reach. Dinner is meant to be approachable in price and style, with meals starting at $65, two seatings per night (6:00–8:00 p.m. and 8:30–10:30 p.m.), and a willingness on the chef’s part to tailor service toward straight sushi or fusion based on diner direction." - Clair Lorell
