"After five years as a SE Division salad cart, Garden Monsters is upsizing into a permanent building in the Hollywood district on NE Sandy at 40th Avenue (part of the former Pono Farm) this spring, owner Kyle Hulings told Eater. Hulings says the extra space will make prep much easier — they’re going through 40–45 pound cases of romaine each week — and will transform operations and speed service. He plans to keep the existing SE Division cart while maintaining the same wide-ranging, inclusive menu (vegans, gluten-free, and beyond), keeping classics like the Cobb and club salads, and adding a handful of new sides, dressings, and salads; the Hollywood spot will be more grab-and-go with about 15–20 seats. Once the new location opens he also plans to move into catering and put two currently unused food carts back into service." - Tim Forster
