"Doyaji reinterprets classic Korean barbecue into something that can be served out of a compact food cart. Instead of atop a charcoal grill, barbecue here is served in bowls, like seared pork belly over purple rice and kimchi, or pork belly glazed with a spicy, earthy gochujang sauce served over purple rice with green onion salad and pickled daikon.
