Much-Anticipated Bishop Arts Japanese Restaurant Salaryman Is Finally Open - Eater Dallas

"Former Lucia sous and popular pop-up chef Justin Holt has debuted Salaryman, his much-anticipated Japanese restaurant, in the Bishop Arts District. Over the past several weeks, Holt has been taking reservations for “mock service” at the tiny, 27-seat restaurant via Instagram, but the restaurant officially opened its doors to the public this week. Open for dinner service only, Salaryman first began as a series of popular ramen and yakitori pop-ups that Holt would host at bars and events across the city. At Salaryman, diners will be able to feast on ramen that’s made entirely from scratch at the restaurant, including noodles made with freshly ground flour. Yakitori and other grilled, skewered meats are also, of course, a big staple of the menu, with options like aribiki sausage and chicken meatballs. Boozy options include a selection of cocktails made with shochu and Japanese whiskey. Salaryman is now open Tuesday through Saturday from 6 p.m. until “late.” The restaurant does not take reservations, but does offer a “sign-in” style waitlist that allows diners to write down their name and phone number and wander around the neighborhood while waiting for a table." - Amy McCarthy
