"A highly acclaimed Dungeons & Dragons–themed pizza cart on Alberta, Paladin Pie started as a pandemic pop-up after Brill was laid off from Portland pizzeria Oven & Shaker. I describe its pies as built on a naturally leavened sourdough developed at home with a two-day fermentation at about 70 percent hydration, yielding the chewy Neapolitan crust the cart is known for. Toppings range from curly Ezzo pepperoni and roasted mushrooms with Parmesan cream to rotating specials like a bacon‑kimchi pie and a butternut squash curry pie, and any pie benefits from a drizzle of the cart’s Calabrian chile crisp; the buffalo chicken pizza is a longtime favorite. In the pop-up stage Brill raised money for mutual aid funds at events, though fundraising has become less viable as the business grew." - Rebecca Roland
