"After an abrupt June closure that surprised the local community, this 62-year-old Northwest Side fixture is set for an early-December dinner-service comeback under new owner Paulo Villabona, who officially took over on November 1; the prior owner, George Karzas, had cited staffing shortages as the reason for the shutter. Best known for barbecue ribs and classic steakhouse fare, it’s bringing back signature tender ribs slathered in a sweet peppery sauce—plus a few new additions—while honoring previously issued gift cards and rehiring many former staff, with plans to host live jazz and blues several nights a week. Founded in 1963 as a small tavern near Milwaukee Avenue and Gale Street by George and Joan Chioles, the restaurant became a dining sensation after cook Louie Artis introduced a baby back rib recipe a couple of years later, relocated across the street in 1969 due to city construction, and later thrived under the Chioles family before being sold to the Karzas family in the 1980s. Over six decades it has become a beloved neighborhood institution with deep community roots, and Villabona frames the purchase as a commitment to community—“keep making amazing food,” let the “phenomenal staff” shine, and keep this pillar alive for another 60 years; expect market fresh seafood, fall-off-the-bone ribs and choice steaks." - Jeffy Mai
