"Located on the riverside of Caesars Hotel and Casino downtown, the newly opened Nobu New Orleans is a 175-seat restaurant with a bar and lounge area, sushi bar, and the chain’s signature dining pods. I can try Matsuhisa’s game-changing sashimi, nigiri, tempura, kushiyaki (grilled meat skewers), and sushi tacos alongside wagyu dumplings, crispy okra, lobster salad, gambas al ajillo, and Australian lamb chops from a vast menu. Four dishes in particular feel canonical here: yellowtail jalapeño ($32) — inspired by Peruvian tiradito, with six thin yellowtail slices dabbed with grated garlic, topped with fresh jalapeño, dressed in ponzu, arranged in a starfish shape and plated with cilantro and a central slice of radish, carrot, or beet; miso black cod ($48) — sablefish marinated in Nobu’s den miso (miso paste, mirin, sugar) for three days, then broiled to a slightly sticky, crispy crust and served with pickled ginger and dots of saikyo miso; spicy tuna crispy rice ($34) — pressed sushi rice cubes fried to a crisp topped with finely diced tuna mixed with Japanese mayo, sriracha, and green onion and served with fancy toothpicks that resemble mini chopsticks; and rock shrimp tempura ($32) — a Nobu-origin dish of tempura shrimp tossed in a spicy sauce (rice vinegar, garlic, chile, yuzu) and served on lettuce with chives (building on the popcorn-shrimp legacy popularized by Paul Prudhomme). Nobu New Orleans is open for dinner reservations Wednesday through Sunday, and a Nobu Hotel in the casino’s new tower is slated to open later this fall." - Clair Lorell
