The noodles here are all hand-pulled and come in varying thicknesses on a scale from “vermicelli” to “triangle.” As for the actual preparation, you can get them in soup form, like ramen or red-braised beef soup, or in a semi-dry form like dan dan noodles. The sushi is good, fresh, and affordable, but noodles are the thing to get here.
