But the glasses are delicate, the silverware heavy, and the place is owned by the family of a well-known NYC wine importer, who has long relationships with many European, particularly French, producers. Behind a polished wooden bar, chefs use in-season ingredients from the family farm to create generous dishes that play well with the wines: salad tinged with the bitterness of kumquat, duck liver mousse with pineapple relish, a pork chop with dinuguan sauce.
