Bomb Biscuit sets a new city benchmark for the chicken biscuit - Review - Atlanta - The Infatuation

"When you’ve already spilled coffee on yourself, stubbed your toe, and gotten a passive-aggressive text before 9am, Bomb Biscuit is the place to turn your morning around. Show up with a group, stay too long, and leave full and a little happier than when you walked in, because the breakfast here is a mood lifter. Sunlight pours through big picture windows, while cookbooks and framed family photos line the elevated back dining area. The bar is front and center for your 8am mimosa cravings and there’s a takeout window that faces the courtyard, where you can pick up your biscuits while avoiding eye contact. Setting a new city benchmark, the biscuits here are thick and buttery with more layers than a Ryan Coogler film. Remarkable on their own. But their famous biscuit sandwiches take things to the next level—especially the chicken thigh biscuit that honors ATL’s lemon‑pepper legacy. Plus, they know their way around all things dough: Pancakes emerge thick and moonbounce-soft, full of buttery texture. And the maple butter chicken‑and‑waffles pairs a plate‑sized golden waffle with fried chicken that crackles just right. Food Rundown Stone Ground Grits Creamy, and rich—these taste like someone in a floral muumuu made them from memory. Buttermilk Bis-Cakes You should definitely get these pillowy but dense pancakes that perfectly soak up syrup without getting soggy or wet. If you absolutely must choose between pancakes or waffles (which is tragic), get these. The Glori-Fried Chicken Biscuit A fried chicken thigh with garlicky seasoning and a crisp crust, layered between two thick, buttery biscuits. You can also get this with one of their specialty biscuits, like black pepper bacon, cheddar jalapeño. This is exactly what you came here for. photo credit: Amy Sinclair Lemon Pepper Chicken Biscuit Citrusy and sharp with a good kick of black pepper. A nod to every ATLiens favorite flavor combo, anchored by juicy thigh meat and those same signature biscuits. This is maybe our favorite chicken biscuit here. Maybe. photo credit: Amy Sinclair Big Country Ham Thick-sliced and salty in the best way—less rubbery deli ham, more tender than pork steak. It’s a strong contender for the best biscuit here. Again. photo credit: Amy Sinclair Uncle Bobby’s Breakfast You get three salmon croquettes with a snappy, golden crust and a soft, cheesy interior. It comes with two eggs, girts, and a biscuit, and it’s a proper nod to a church-socks-with-sandals-wearing Unc. Maple Butter Chicken‑n‑Waffles A plate-sized waffle, soft, and slightly sweet, topped with a juicy piece of fried chicken breast with crispy breading. You may not need the syrup, but we like to slather this with it anyway. photo credit: Amy Sinclair" - Jacinta Howard
