"On the corner of East Eleventh Street and Third Avenue in the East Village, I found the Dolar Shop, a Macau-inspired, Shanghai-based chain whose individually sized pots can be fitted with an S-shaped divider so I could sample half Exquisite Silver Soup—a milky pork-and-chicken bath studded with chicken thigh and pork tripe—and half Szechuan Hot & Spicy, pungent with peppercorns, garlic, and chilies. Both broths do magical things to crunchy honeycombed lotus root, scoops of gelatinous shrimp pâté that firm up like meatballs, slippery boiled quail eggs, and gorgeous shell-on white shrimp.
