In that time, Zuma has grown into a global family of restaurants, but hasn't lost any of the magic that makes it such a favorite. The décor at the bi-level Madison Avenue outpost—the newest of the bunch—is modern through and through while the plating is elaborate and artful, which is fitting considering the menus is, well…elaborate and artful: vegetable dishes from the robata grill, light-as-air tempura, and the freshest sashimi."
