"A modern harbour development just outside the city plays host to this stylish restaurant and its futuristic bar. The name refers to the 180° view from the U-shaped kitchen counter; sit here to watch the chefs in action or at a more intimate table looking out over the harbour. Ambitious, visually impressive dishes are the German chef’s hallmark and his detailed creations show a memorable array of flavour and texture contrasts. Choose between the tasting menu or an upgraded ‘Premium’ experience with caviar, truffle and cheeses. Warm, engaging service helps to create a relaxed experience." - Michelin Inspector

I had not planned on a 4 1/2 hour dinner, but the slow pacing (and it felt slow) drug this dinner out far longer than needed. All the food was good. Balanced textures and flavors, but nothing stood out. A note on the ‘tomato marshmallow’ - it’s more like a tomato soup foam and is in need of a little Parmesan crisp to make it delicious. Some of the dishes had unneeded component’s- like spicy popcorn. It’s a beautiful venue with a view of the kitchen and the chef and the harbor. I did find the cost a bit excessive. Although everything was good, I would not come back.

I had the pleasure of dining at “180° by Matthias Diether”, and I was truly impressed. This restaurant fully deserves its two Michelin stars. Each course wasn’t just a dish — it was a story told through flavor, texture, and presentation. The menu started with a scallop, where the pure taste of the product was delicately preserved and beautifully highlighted. Then came the sea bass — incredibly fresh and perfectly cooked, accompanied by a ragout and a bold celery-forward sauce that added a refreshing note. The pigeon deserves special praise — incredibly tender, with a subtle balance of flavors and a wine pairing that elevated the experience to something unforgettable. The BEEF dish was another highlight — a classic combination of steak, spätzle, and smoked shallots, but reimagined with elegance and creativity. The cheese course was outstanding, offering a thoughtful selection from soft to aged varieties — each cheese was introduced with a sense of respect for its origin and style. The desserts were both surprising and delightful — one featuring dill, which brought freshness and complexity, and another: a modern take on a German cherry cake, beautifully paired with port wine. Service was impeccable — professional, friendly, and attentive without being intrusive. The atmosphere was warm and elegant, with an open view of the kitchen that added to the experience. I highly recommend this restaurant to anyone looking for more than just dinner — this is a true culinary journey. Thank you to the whole team at “180°” for an unforgettable evening!

First day with the summer menu and what an evening. If you didn’t visit 180 Degrees yet, please do. Tallinns best sommelier for sure, with knowledge and good humor. BTW, we had the premium wine pairing This evening it looked like a brand new team, but they did well. Congratulations with the menu and we can’t wait to try the next menu in 4 month 👏 One little tiny thing was the temperature in the restaurant. A bit chill, but we survived 😁

What an excellent Michelin ✨️✨️ experience, big thanks to all. All our special diets were truly covered, and the way they looked like other dishes❤️ I personally love it when the guests can watch the dishes being prepared in the open kitchen. Owerall the tasting menu courses are skillfully crafted combinations of flavor and visual presentation, made from carefully selected ingredients. And the wines...well, our semilier Kevin he was an awesome 👌 great 🍷 wine bearing!

180 degrees was our second two-Michelin-star experience, and once again I did feel like the restaurant was on the next level compared to one-star places. Food was innovative, surprising and in one instance quite "classical" in a comforting and familiar way, while demonstrating technical virtuosity. Wines complemented the dishes well and were also sometimes bit "180 degrees" from what you'd expect. The difficulty of pairing was obvious as the the restaurant tends towards the complex in the taste palette present in the dishes. But they made it. In my view the two vs. one star distinction mostly comes down to the service and the feel you have of the entire affair from start to finish. We felt very well taken care of throughout the evening. The professionalism of the staff was spotless, with the right balance of formality and joviality. Extra shout-out to Kevin the sommelier whose introductions of the wines were great listening. His level of game is such that I'm happy to still have my girlfriend with me now we're back at home. We are wheelchair-users so were happy to note the restaurant is perfectly accessible. They atmospheric restaurant space has a built-in ramp to the level of the tables from where you have a view of the sea. There is an accessible bathroom.

Certain dishes definitely earn the two stars. Standouts included the oxtail and lobster roulade. The restaurant is beautiful. We started our experience in the lounge with the amuse-bouche and dined at the chef‘s table. The back of house staff were courteous, passionate, and eloquently explained each dish. The front of house service lacked refinement and was inattentive at times which affected our overall experience.

It’s hard to put one’s finger on what makes 180 an unforgettable experience. The atmosphere, food, wine and hospitality are all unmatched in Tallinn! I highly recommend the vegetarian full tasting experience accompanied by the wine pairing 🍷👨‍🍳
