I had the pleasure of dining at “180° by Matthias Diether”, and I was truly impressed. This restaurant fully deserves its two Michelin stars. Each course wasn’t just a dish — it was a story told through flavor, texture, and presentation.
The menu started with a scallop, where the pure taste of the product was delicately preserved and beautifully highlighted. Then came the sea bass — incredibly fresh and perfectly cooked, accompanied by a ragout and a bold celery-forward sauce that added a refreshing note.
The pigeon deserves special praise — incredibly tender, with a subtle balance of flavors and a wine pairing that elevated the experience to something unforgettable.
The BEEF dish was another highlight — a classic combination of steak, spätzle, and smoked shallots, but reimagined with elegance and creativity.
The cheese course was outstanding, offering a thoughtful selection from soft to aged varieties — each cheese was introduced with a sense of respect for its origin and style.
The desserts were both surprising and delightful — one featuring dill, which brought freshness and complexity, and another: a modern take on a German cherry cake, beautifully paired with port wine.
Service was impeccable — professional, friendly, and attentive without being intrusive. The atmosphere was warm and elegant, with an open view of the kitchen that added to the experience.
