I came here with my fiancée for my birthday a couple of days ago. This is easily one of the best French restaurants I've been to in my life, and I say this as someone who is part French, was born in Paris and has been to a good number of Michelin starred restaurants in France.
In particular, the Magret de Canard à l'orange, which is one of my all-time favourite dishes, and not an easy one to get right, deserves the most recognition - having had it (and struggled to find in recent years) at many different restaurants in Paris, I can say that this is the first time I've found one that can truly rival the one I make myself at home. The sauce had just the right proportions of orange juice, orange zest, and orange licor, something that takes years of practice to truly master.
The foie gras spring roll is a very unique and also masterfully prepared starter which I highly recommend as well - but then again those are just the things I ordered, and I have the impression that there are many more gems on this menu that I still need to explore.
The portions are very generous though, so if you're going for the dégustation menu, you should make sure to be very hungry when you come here!
I will definitely be back, as often as I'm able to in between my travels. The Trois Gourmands is a very underrated pearl of fine dining in Saigon. Guidebooks and critics should definitely revisit it and pay more attention!
