LOVED this experience. Abejas Bistro was literally perfect from start to finish. The plate presentation was exquisite, only to be matched by multiple layers of flavor with each dish. The service was informative, but not overbearing and the pacing was, well... perfect.
Bison Tartare: Fennel caraway kraut, stout mustard, pickled mustard seed, pretzel cracker, tamari egg yolk
Rabbit Confit Galette: Hazelnut pate brisee dough, fava bean, currant mostarda, ricotta salata, fava tarragon pistou
Pan Roasted Duck Breast: Green pistachio mole, Latin kimchi, duck confit, royal corona beans, fermented cilantro
Seared Scallops: Sunchoke puree, braised leeks, broccolini, pink peppercorn beurre blanc, sunchoke chips
Beet Red Velvet Cake: Meyer lemon panna cotta, beet powder, yuzu glass, winter citrus supremes
Smores: Chocolate pot de creme, marshmallow, graham cracker, honey tuile
Bread service: Locally sourced from Grateful Bread in Golden. Rosemary sourdough and jalapeño cheddar served with whipped butter with black sea salt, and the Daily Bread Spread: Pureed carrot, beet, and onion
Squash Ribbon Salad: Black walnut, arugala, winter citrus, pickled fennel, fermented chicory, candied citrus vinaigrette
