Sexto Colectivo’s Pop-Up Dinners Are Among Mexico City’s Most Exciting | Eater

"A brewing outfit whose master brewer provided technical instruction in fermentation to a cooking collective, teaching lactic, acetic, and ethyl fermentation and helping the group produce their own session IPA. The brewer’s lectures and hands-on guidance were integral to the collective’s experiments with beer, vinegar, and other fermented products used in their menu." - Laura Tillman

Love love love and would be back many times for so many different occasions! Walking through the door, the first thing l loved was the space itself. Every shelf is alive with objects that feel like they’ve been collected over time. If you like artisanal beers it’s deffo your place, for me the cacao, horchata, and chai were honestly out of this world, and I am always grateful to have these items on a menu. They also have prebiotic sodas and incredible looking cocktails 👀 Everything feels intentional and super conscious. The food is next level delicious and I wanted to order the whole menu. Went with tacos, my fave was the Milanesa, and the esquites were mind blowing too. The walls, drinks and food are full of stories and if you are curious it’s truly mind opening! I felt like my cultural and geographical understanding of Mexico City expanded after my visit 🥰

Very cool project full of artesanal beers and food with ingredients from local producers. For the first time I think you must be open to suggestions an to explore flavors. I tasted the degustation menu and a couple of beers and I preferred stout and Baltic Porter. Black hummus was delicious.

I don't tend to give all 5 stars across the board, but I love this place. The decor, music, food, alcohol... all amazing. I recommend the ceviche de hongos (mushroom) and the molotov de platano (banana croquettes that you can stuff with mushroom or cheese and pair with Mole or chutney). We got the cheese Mole combo. I got a flight of all the first four beers and none disappointed in flavor. They even have fresh pulque (Mexican traditional beverage) and get this... they make a margarita out of it!!!! Stay open forever please!!!!

Nice find. They make their own beer and it is very good! Wide range of options. Sit inside or enjoy Avenida Amsterdam and sit outside in the shade of the trees.

We did an incredible brewery tour today. My partner and I learned so much. We started in Condesa and the CEO drove us to one of their brewery sites an hour south of the city at the foot of a volcano and talked to us about sustainability and harvesting from the land they have the brewery on. They make beer, mead, and cider. 5 dogs on the property and the woman that runs the home made us mole and an incredible lunch. Matias has a PhD. in economics, he started a collective with 11 of his friends. He was so well-spoken and knowledgeable. A wonderful day well spent.

This is a gem in the Amsterdam neighbourhood if you’re looking for something delicious and a little different. One of our favourite places to get amazing craft beers, pulque and other creative drinks. Snacks and food were delicious and beautiful—super interesting and quality ingredients. Staff are friendly, vibe is calm & hip, and the music playlist always good!

We’ve been venturing to this place while staying in the area for a while. Every time we’ve had a great experience. The staff are all very friendly and passionate about their offering. The cocktails and beers are good quality but the food is the star. Unique dishes that are local and high quality. We’re working our way through the menu! A great spot in the day or evening!

Really enjoyed their previous location in Roma Norte and have wanted to visit this new location for awhile now. I can say that it did not disappoint. Laid back, welcoming atmosphere with friendly service. I came for the beer but had to try some food, also. Both were possibly better than at the previous location. They have a different attitude towards their beers than most other brewers in CDMX and it shows in the end result. You really have to experience it for yourself. Don’t pass up the hidromeils, either.
