‘Top Chef’ Star Serves Wagyu Meatballs at His New Las Vegas Restaurant | Eater Vegas

"Chef Fabio Viviani — the season-five Top Chef “Fan Favorite” and breakout television figure since 2009 — is making his Las Vegas debut at JW Marriott Las Vegas in Summerlin, opening Thursday, July 3. Viviani, who has opened, co-owned, or lent his name to nearly 40 restaurants, says, “I love to work with resorts,” and that “this is about the food and building something in the community to feed the Las Vegas clientele.” The menu is traditional Italian with touches of Vegas glitz: dimpled, homemade orecchiette tossed with spiced duck sausage, charred fennel, white wine, and a hint of chile; a frutti di mare featuring squid ink pasta in a briny mix of clams, mussels, and shrimp in lobster broth; mozzarella hand-pulled tableside and draped over heirloom tomatoes while soft and warm; and the chef’s signature meatball, now upgraded with wagyu, ricotta, and rich tomato sugo, arriving “juicy and fragrant with basil.” Desserts include layered jars of espresso-soaked tiramisu and sticky lemon ricotta cake with strawberries. Cocktails feature the Montenegro Nights — bourbon with vanilla and caramel syrups, bitters, and a toasted marshmallow — and the beverage list is rounded out by Viviani’s own Fabrizio di Rienzo wines, exclusive to his hospitality group. The restaurant is part of JW Marriott and Rampart Casino’s $75 million renovation, which also adds a Neapolitan pizza counter adjacent to the restaurant and an Oyster Bar slated to open later this summer; Viviani describes the planned counter as “an oyster bar on the Amalfi Coast,” serving seafood pots, terrines of steamed clams, shellfish-laden seafood towers, and Champagne. Since his Top Chef appearance he’s also published cookbooks, returned for Top Chef: All Stars, fronted San Pellegrino and Dr. Oetker frozen pizzas, and launched Jars, a dessert-in-a-jar chain now in seven states. The food was spectacular. Fresh pasta that can't be beat. The meatball was so good. The watermelon feta salad was the favorite between the 2 appetizers. The gnocchi was fresh and melt in your mouth. The shirt rib agnolatti pasta was also melt in your mouth. The ossobuco was wonderful too. It was a huge portion. The fresh foccacia was light and fluffy and so good. The sticky toffee date pudding was wonderful too. The ambience is so nice. The lighting is not to bright not to dark and set the mood. Make reservation bc better to have. As this place becomes more know about ppl will be flocking here!

This is my mom’s and my absolute favorite spot in Vegas. She’s a local, and I fly in every month—we never miss it. The hospitality is unmatched (the manager even hugged us on our second visit), and the food is next-level. The handmade rigatoni with vodka sauce is perfection, portions are generous enough for two days, and the meatball—tender, flavorful, and the size of a softball—is unforgettable. Best Italian I’ve had since Chicago. 100% recommend.😍🍝

Thought it would be another celebrity chef Italian venue with just hype. I was wrong. Portions are massive. Venue is brand new and clean. Service is already performing (great work Jose). Free bread? Surprisingly yes and absolutely delicious. Calamari portions were large and crispy. Meatball is a must since rigatoni isn't meat. Rigatoni was piping hot - added peppers on and it was delicious. Brussels sprouts were an interesting flavor with dash of Asian in it. Cocktails were spirit forward. Wanted to try the Tiramisu but was too full. Very good restaurant with large portions and fun staff. Was worth leaving the strip.

Our server, Andrew, was wonderful. He had excellent recommendations and was kind, helpful and made our experience pleasant. As a local, I prefer to spend my money in places you feel valued and welcomed. The staff here does just that...I brought my mom in to celebrate her birthday and what a treat it was to meet Fabio too! She said it was the BEST italian meal she's ever had, hands down. Well done! Our family dines in often and always tell everyone to visit. Ciao!

AI Pazzi is exactly what Summerlin needed — a place that makes dining out feel like an experience without being over-the-top. We started with the smoked burrata, served under a glass dome of smoke. The reveal was dramatic, but the flavors lived up to it: creamy burrata, heirloom tomato jam, basil, charred bread, and the surprise star — candied, thick-cut bacon. Sweet, smoky, salty, fresh — one of the best starters we’ve had anywhere in Vegas. The Fabio’s Wagyu meatball was just as impressive — rich tomato sauce, whipped ricotta, basil, and grilled bread. A comfort classic, elevated. For mains, we shared the chicken Parmesan and the rigatoni alla vodka — both excellent, perfectly executed Italian staples. Sitting at the counter turned out to be a win. Mark and Krista took care of us and were fantastic — warm, friendly, and attentive the whole night. Next to us, two ladies ordered the Caprese, which looked beautiful with heirloom tomatoes and fresh mozzarella. They couldn’t stop talking about how much they loved it — so that’s already on our list for next time. For my wife and me, being back at the JW Marriott was special. We used to come here a decade ago, and with restaurants like AI Pazzi moving in, we’ll definitely be coming back often for food, drinks, and good energy. Summerlin finally has an Italian spot that’s equal parts fun, flavorful, and welcoming. Highly recommend.

Wow, I've been to Rampart Casino many times however, I have never dined at any of the restaurants. With that said, we decided to check out the newest restaurant, Ai Pazzi. We made reservations online which was easy to do. We were greeted by some nice hosts who sat us at our table. I had a beautiful view of the restaurant. Our server was William and both Tupac and I were impressed with the service he provided. Hands down 5 Stars for him. Food: Table Side Burrata. Charcuterie with imported meats, cheese and accouterments. Shortrib Agnolotti Complimentary Bread Try not to eat a lot of bread. Lol but it was good. The Table Side Burrata was delightful. It had that smoke flavor and the presentation was definitely a Foodie moment. The charcuterie had a lot of different meats and cheese. Lastly, the Agnolotti was filled with a lot of meat. Very tasty but to me, it's was extra salty. I love salt and for me saying it was salty means it really was. Still edible though. I would highly recommend Ai Pazzi. Come check them out.

Restaurant is in the adjacent Rampart Casilno complex shared with JW Marriott. Reservations through open table or seven rooms apps.' Managed by celebrity chef Fabio Viviani. His Los Angeles restaurant Firenze Osteria is now closed unfortunately. Eager to try this elevated Italian dining. Food options here were quite excellent and ranged in price from reasonable to luxurious. Booths, tables and bar seating were well spaced, comfortable leather like seats. Each table is set with wine glasses which we did not need. Started out with the table side smoked burrata with tomato and bacon jam, plus toasted bread: so good that I scraped the dish clean with the complementary bread. My daughter and I shared our entrees: Shrimp gnocchi with pesto : soft pillowy gnocchi and tender shrimp. Maielleto is a grilled salt and pepper crusted pork chop: delicious and tender , with a hint of spice from the crust. Cippolini grilled onion was sweet, charred broccolini tender. Cocktails :Paloma and Fiore both had floral and citrusy notes. Kitchen prepared a rigatoni with Alfredo sauce for the toddler (not on kids menu). Great attention from server Heather. Frequent table checks and clean up by other servers, always politely asking if the dishes were okay to take away. Needed with dessert of sponge cake with champagne macerated strawberries, surrounded with chantilly cream and topped with a dollop of vanilla gelato. Other tables had table side Caprese (cheese made fresh at table) and a fettuccine Alfredo for two. An option for sharing with more than two.

I kept seeing this restaurant on IG, and decided to celebrate my birthday here with 8 of my friends. The food was good. I had the Frutti di Mare and it had a lot of seafood. We waited a very long time for bread for the table and it was not good, as if it had sat uncovered in a freezer at some point. My friend made the reservation and confirmed we would be able to have our bill broken down by customer. This was not the case. This caused some frustration as the staff seemed eager to have us settle the bill, and my friends were frustrated and confused at having to break the bill down manually themselves. All in all, it was an okay experience. The restaurant added a 22% gratuity on the bill, which was a little aggressive and not deserved. I probably will not be back.

We've had takeout from here and it was very good. Among the best Italian food in Las Vegas, honestly. This was our first visit in person. The food was sort of a mixed bag: prosciutto pizza was good, Caesar salad was acceptable but not special in any way, the short-rub pasta was very good. And, in fact, of our 4-top,, all the pasta was quite good. Well cooked pasta, very tasty sauces. Service, while very friendly, was just too haphazard. Our server repeated herself a couple times, repeatedly and unnecessarily apologized for cleaning the table of crumbs, and either by a mistake of hers or of the kitchen, applied a special request from one of our guests to another guest's meal. This resulted in the one of our party having to wait for their dinner while the rest of us let hot food grow cold. Bottom line is that in a valley full of options, ai Pazzi has promise that's not quite fulfilled. It feel's not quite ready.

Went on a Tuesday night. I have been dying to get here..I love Top Chef and wanted to check out Fabio's restaurant and he did not disappoint. The restaurant is beautiful, it can get loud in there because the flooring has an echo effect. All the furniture, fire feature and place settings were well thought out. Sadly there were people taking pictures of food for the first 45 minutes with bright lights and it was extremely distracting. Hopefully they never do that again to anyone...people are spending good money in here...do that stuff BEFORE opening the restaurant at 5 pm. They started us off with complimentary focaccia bread strips with rosemary. This is some of the best I have ever had....so good! Hub and I ordered some draft beer and it was very fresh tasting and cold. Hub decided on the spicy vodka rigatoni dish. I know I said earlier in the year that my favorite of this is at Kassi beach club...but this is now the champion. The spice level and freshness of this dish was amazing. It was topped with super fresh mozzarella. I ordered the short rib agnolotti. So delicious...but extremely rich...I would suggest sharing this if your palate cannot handle all the short rib and cream sauce. I still loved it and wonder how those pizzas out front must taste? Really excited to come back here...hopefully with no picture taking. We finished with the sticky toffee cake for dessert with toffee brittle. It was the perfect amount and was quite a finish to an amazing meal.

You know what.....I liked this place. It had a feeling of comfort Italian. My husband made a reservation on the website (open table) upon arrival the hosts couldn't find our reservation. The place was roughly a quarter of guest, which means plenty open tables. They stated that there must be something going on with the open table, but did seat us anyway. The dining is elegant enough with a comfort feel in my opinion. Dim lighting, not too much on the tables. Open view of the kitchen etc The menu was perfect, with a small disappointment of the wine selection. If you wanted to wine snd dine you'd need to really purchase the good stuff. I believe I saw maybe 5-6 red wines. Which is fair consider the bar space. But if you'd like a cocktail and have your own in mind, they do offer to make your creation. We ordered the red blend at $14 a glass Sparkling water The meatball ( which was phenomenal) if only I could figure out the ratios for a good meatloaf here. There is a secret..lol A Cesar salad ( which had a tang to it, which was so good for the palate) And the Alfredo..added chicken (in which they bring a cart,toss the cheese and sauce in front of you) it wasn't anything spectacular but cool to see. They do serve you bread for the table. Ours was dry and cold. We didn't know if it was supposed to be that way but my husband didn't care for it. So we put it to the side. Dana was our server. She was very kind and answered all of our questions. We are grateful to have had the experience. I get so worked up about the food, I forget to be the photographer haha

Wow this is ramparts newest Italian restaurant, the restaurant is nicely decorated and very inviting. We were greeted by the host and seated immediately, everyone that we talked with was really nice and super friendly. The menu is very appealing and I wanted to order everything. The appetizers are good portions so be careful as you won't be able to finish your dinner. I'm guilty of this.... They bring you focaccia bread to start, I also ordered the prosciutto pizza. This is an appetizer wow super big portions. This was so tasty and I recommend this. As for dinner we got the wagyu short rib bolognese, this is my favorite the pasta is cooked to perfection and the short rib is so tasty and cooked perfect. The menu has so many options I have to go back to try everything else. Seafood and fish and they have a pasta table side for two people, that's just to name a few. Don't forget to check out their cocktail menu and wine selection. We had a great time here I will return with more friends so we can order more food and try other dishes. I recommend this place 10/10 give this place a try and happy eating....

Love the bar here. It's right across from the banquet room where we got married, so we have our annual dinner here for our anniversary. This year it's now Ai Pazzi and we were pleased with the experience. Generous portion of meat on the charcuterie, the osso bucco was done right and the short rib pasta was great. Solid cocktails and wine list.

We accepted chef Fabio's invitation for his birthday celebration and as the invitation stated to meet and have a photo opportunity. We arrived for our 5:30 reservation and were seated in a comfortable banquette table with a great view of the dining room. However during our 1.5 hour dining experience we did not meet the chef. We observed chef Fabio stopping at several tables and greeting customers but it appeared that he only stopped at selected tables. Overall we enjoyed our meal but were disappointed with the event. We have two favorite Italian restaurants in town where the chefs make a point in stopping at all tables and not just during special occasions. It would be great customer relations if chef Fabio took a page from their play book. Regarding the service and food, our server Kory was friendly and helpful. He checked on us several times to determine our satisfaction. Service was not rushed and paced to our satisfaction. We enjoyed our cocktails at a leisurely pace followed by complementary focaccia bread and table side smoked burrata. The burrata appetizer was unique as it was served with the cheese on top of chopped tomatoes and bacon. The smoke was released from the glass dome table side. It was a very nice presentation and delicious starter. Our entrees were the Branzino, Short Rib Bolognese and a side of Herb Roasted Potatoes. The Branzino was the whole fish filet cooked perfectly although 2 bones were found. The Short Rib Bolognese was a large portion of tender meat and pasta. The Roasted Potatoes side dish was more than enough for two people and provided some take home along with Short Rib Pasta.

What a lovely addition to JW Marriott! I will say I was never inclined to come to this resort/casino, but an invitation to dine at ai Pazzi brought me over. I was very impressed by the enthusiasm of the wait staff. They spoke such highly of many of the items we were served. I was here with a large group so the entirety of our meal was family style. They have a spacious back room with plenty of TV screens for presentations. The main dining space felt romantic but also lively, a perfect balance. My favorite dishes of the night included that ginormous meatballs, the antipasti spread, and the short rib agnolotti. From the sweets, the sticky toffee and tiramisu were a home run. I did indulge in their signature tiramisu cocktail but be warned, it's strong!

Now this is a restaurant Rampart and Summerlin definitely deserves! Taking place of the old Spedini, ai Pazzi, is a modern luxe restaurant at the Palms tower side in the JW Marriott/Rampart Casino. Although Spedini was okay, this place is a whole other level. The kitchen even had its own atmosphere with you hearing chatter from them and "yes chef" which made it feel like you were part of it (similar to Hell's Kitchen just without the negative yelling of course). The service was friendly and attentive. Our server, Heather, was funny and charismatic. She made sure you get things you wanted before you even thought of them, such as more wine or bread. Speaking of the bread, the starting freshly made focaccia was delicious. It was fluffy, with rosemary and nicely dusted with Parmesan sprinkled with some olive oil. A great way to wet the palette for what's to come. Such as the Arancini... which was maybe the best I ever had! It had the perfect outside crunch with a very nicely seasoned risotto with Cacio e Pepe flavoring. You just have to order this! The mains were good as well! The braised chicken was extremely moist and paired with with the peppers and potatoes it was cooked with as well. The rigatoni vodka with burrata was also tasty filled with a lot of flavor, homemade pasta, and a pack of spice (which may have been a little bit too much for me). Unfortunately, we were so full from the meal we couldn't even save room for dessert, so we will have to be back to try that on the next visit (like the sticky toffee pudding). Also, we need to try some of the table side options as well, such as the caprese or fettuccine Alfredo. I would say the only drawback is that the pricing here is a little more for the area outside of the strip, though still better than most what you can find on the strip. Other than that, you really should give this place a shot and is definitely worth it to get some great Italian food!

From service to ambiance we were pleasantly surprised with Ai Pazzi. The food was amazing! We started out with the octopus which was so delicious paired with roasted potatoes. The table side caprese salad was out of this world. The entrees were also great, we had the halibut Milanese and frutti di mare which had a spicy aftertaste we loved it all! Can't wait to go back and have dinner there again

The ai Pazzi Pizza is a take out counter and only serves pizza and two salads, and beverages. The ai Pazzi Restaurant is a full service restaurant and bar that is only open for dinner.

Love this new restaurant inside JW! Like most Italian food, some dishes can be a little bit saltier than what I'm used to but it was good. Here are some of my favorites: 1. Waygu meat ball - it's 1 very big meat ball that melts in your mouth! 2. Smoke burrata - the smokey flavor is a bit different. Love the soft cheese 3. Grill octopus - my favorite! The octopus were super tender We also go the lobster pasta and the halibut. The halibut was a little dry and the lobster pads were a little too sweet. Personally, their appetizers were better than their main dishes. Service was good. The waiter was attentive but not too hovering over us.

What a wonderful dining experience we had. We had heard about the tableside mozzarella, so we ordered the Caprese salad and we're not disappointed. It was made with fresh mozzarella and heirloom tomatoes, bursting with flavor. After having the Caprese salad for a starter, we shared a 12 oz Fabio's Wagyu meatball and a Wagyu Short Rib Bolognese. They were both absolutely delicious. If I recall, the waiter said the meatball was Fabio's mother's or grandmother's recipe and boy did she get it right! The Bolognese was so rich and flavorful, we wanted more. Each year we visit Las Vegas and we will definitely be making this a staple of our visit each time we go. Thank you so much for the delicious meals, fabulous service and wonderful atmosphere.

ai Pazzi is located in the JW Marriott hotel attached to the Rampart Casino. We ate here one night on our vacation and it was top notch. I had a Sicilian Sunset for a cocktail and it was wonderful. My family ordered the Wagyu short rib Bolognese, the Ossobuco Alla Milanese, the Scaloppine Ai Porcini, and the Short Rib Agnolotti. (See pictures!) Each of us raved about our meals. Everything was delicious, and our plates were cleaned! Service was perfect! Our waiter was extremely attentive and the manager stopped at the table to talk to us. A great dining experience!

Wow! One of the best Italian restaurants I've been to for a while. They served family style cuisines, but I had their lobster linguine. Unbelievable! They grilled the lobster and the red sauce with cherry tomatoes was out of this world. Even their Caesar salad was amazing. I tried their dessert. Wow! I can't complain. Everything is amazing. The service was exceptional. The restaurant was located in Rampart Casino outside the strip. I will definitely come back. I highly recommend this restaurant. For Thinsulin fans, it may be hard to find green light dishes here.

This was star of the show. About $35, but this could feed 4+. Top notch. I highly recommend this salad. We requested extra balsamic vinegar. Ai Pazzi: 4.4. I ordered the salad and tasted the other dishes.

I have been to Ai Pazzi 4 times since it opened in July. 5 times if you count Ai Pazzi Pizza which for some reason they don't list as a separate business here on Yelp. Even though we live 30 minutes away that makes us the locals that chef/owner Fabio Viviani claims he designed the restaurant for. I can tell you that the food and service is well above average at reasonable prices. My Focus will be the treatment we received after receiving a text and an email to come visit for the Chefs Birthday. The message read as follows. You know what I love about you? You KEEP COMING BACK. You're not just guests - you're part of the ai Pazzi family now. So here's the deal: It's my birthday, and I want to celebrate with the people who've been there for us. This Sunday, October 12 | 6:00 PM - 7:00 PM Come hang with me - I'll be working the room, visiting tables Photos & selfies - Let's capture the moment together One complimentary Prosecco per person upon arrival - My birthday gift to you! Order your favorites - Plus maybe a dish you haven't tried... We made dinner reservations and went looking to have a few minutes with Mr. Viviani. Instead what we received was a free glass of average prosecco and very rude treatment from the man who invited us. The turnout for the event was not very large so at best the dining room only had about 25% of the tables occupied. What happened then is that Fabio walked by our table 3 separate times during the hour and ignored us each time. The most shocking was that he sat at the table on our left for a good 5 minutes and took pictures . He then walked right past our table literally 12 inches from us ignoring us to greet the table on our right, again spending time and taking pictures. We watched him stop at every table we could see from our seats except ours. To add insult to injury the person running the dining room recognized us early on and made a point to say she would make sure Fabio stopped at our table. I don't know if Fabio's treatment was just rude or if it was arrogant stupidity but the place was so empty he couldn't be confused as to what tables he had visited and which ones he didn't. On our way out Fabio was standing by the kitchen and I was going to approach him to thank him for making us feel unappreciated, but my wife wouldn't let me. I did stop at the Hostess desk to say something but they were busy and I didn't want to distract the other patrons waiting to get seated.(I am not as rude as the host) I have not written a review previously because my wife has written a very detailed and positive review for both the restaurant and the pizzeria on yelp and on her food blog, and I don't like to repeat her opinions if we share the same feelings. Bottom line is I would recommend Ai Pazzi to anyone because of the good food and excellent service. The hard working staff is the only reason that I will give 2 stars instead of 1 star based solely on the owners bad manners. I understand he's just the name on the sign and not the restaurant but he has now made this local he claims to crave feel totally unwelcome, I do hold a grudge and if I do return it will not be for a long time. I do feel sad about losing what had become a favorite in such a short time.

Was excited to see this place opening here. My wife loves Fabio so naturally we were here on opening night. Place looks nice inside, dark on the inside with an open kitchen and a small bar. There are some tables "outside" in the hallway as well We were seated right away and chose sparkling water while we reviewed the menu. We chose the table side caprese and the Wagyu meatball. Bread service was ok, didn't find it to have much flavor. Mozzarella is made table side and was very good. There was plenty of it to go around. The meatball is huge, 12 oz and comes with sauce, cheese and bread. Meatballs are how I judge an Italian restaurant and this one was good. For my pasta I got rigatoni vodka and my main I had the pork chop. This is where things took a turn. They asked we put everything in at once, which is a new trend (that I hate) and said they would course it out. However my pasta and main showed up at the same time. Pasta was delicious, cooked perfectly and sauce was great. Pork chop was dry. The sauce with it was good but the chop was dry and hard to eat. One of the managers for Fabio stopped by the table and asked how everything was and what they could do better? I mentioned the pork chop and he said they didn't get their shipment of meat from Chicago and it would be better next week. He was very nice and asked we give them a try again soon Dessert was good, we got the tiramisu, comes in a mason jar and washed it down with an espresso Service was great, quick to take orders and offer cheese or red pepper. Overall was great and will be back for sure

I made a reservation for 2 at 5 pm and waited 15 minutes to be seated. First negative. The restaurant decor is beautiful. First positive. The entire staff that we encountered was over the top wonderful even though many of them appear to be brand new in their positions. Sorry but an elite yelpers review must be their exact experience. We were seated in an intimate location which was beautiful. Our server Gigi was super sweet. We brought a bottle of wine to be opened by the restaurant. $25 corking fee. Just so you know. We ordered the table side smoked burrata with tomato bacon jam. Great presentation but I wouldn't consider taking a glass dome off the burrata at the table to be "table side presentation."Delicious appetizer however. They also served warm focaccia which was welcomed since the $22 burrata only comes with 2 half slices of toasted bread. On to the main courses. My friend chose the wagyu bolognese and I chose the pollo parmigiana and we ordered a side of roasted brussel sprouts to share. We had to send them back because they were barely cooked let alone roasted. We ended up sending them away after the second attempt because they still were not cooked properly. Now onto my dinner choice. I have a hard time believing that Chef Fabio Viviani created this menu with this flavor palette. Honestly, zoom into my picture. The red sauce is straight out of a can of tomato paste with some garlic tossed in. Absolutely flavorless. I had to take the leftovers home just so the people in my life who are chefs here in Vegas can analyze it. Wow ... just wow. So disappointing. Let's not even discuss the plating on these dishes. When you fill the plate with so much food that it looks unappetizing from the start, it doesn't make the experience better. I have been looking forward to trying this restaurant since seeing so many positive advertisements on Instagram. I'm glad to see the restaurant busy on a Tuesday night. However, this foodie will pass next time around.

A delicious new Italian arrival at Rampart Resort. I recognized chef Fabio Viviani from Top Chef - charming, funny, and he has an irresistible Italian accent. Thankfully, his culinary skills are just as captivating. Kudos to the resorts marketing team for getting the word out with commercials so locals like us know about this place. Online reservations are available and we were warmly welcomed by the lovely hostess. Our booth was plush and perfectly positioned offering a great view of the entire space which is dimly lit, and sultry. Rampart has never been known to me for their restaurants but now they've changed my mind. We started with warm, pillowy focaccia sprinkled with rosemary and cheese, soaking in golden olive oil. Then came a massive meatball, tender and bursting with flavor. That bread is perfect for mopping up every last drop of the rich tomato sauce. A crisp caesar salad followed, dressed in a creamy and well-balanced dressing. We also indulged in short rib agnolotti with summer black truffles, decadent and earthy, and chicken parm that might just be the best we've had in a long time. And the citrus mascarpone polenta, good God! So creamy and decadent. Cocktails were equally impressive. Our server Megan is a star, genuinely passionate about food and where she works. Hopefully they'll roll out a happy hour soon. We left thoroughly impressed and eager to return with family and friends. Welcome to the neighborhood! Vegas just got a little tastier!!!

Been waiting for an authentically good Italian restaurant to take this space over. Ai Pazzi delivers! The atmosphere is energetic and casual-upscale, although the tables are a bit too close. The service is attentive - there were at least three servers to come to the table. The food was delicious. Between the four of us, we tried two pasta dishes (orrechiette which they allowed to sub in chicken for the duck sausage; and rigatoni a la vodka) and the Halibut Milanese- which was enormous--took up the whole plate! They told us Fabio Viviani was in the kitchen - but we didn't believe it :)

After seeing the video of the table side caprese, I had to try this place. It DID NOT disappoint. Everything we had from the caprese, to the focaccia, to the entrees was absolutely amazing. We had the rigatoni with duck sausage. I've never eaten duck, it was phenomenal! The sauce was rich with just the right amount of spice. I love a good meatball, and that's what theirs was! Beyond good, amazing! Chefs kiss!!!

We're big fans of Fabio Viviani having watched his Top Chef seasons and we really REALLY wanted to love this new restaurant but unfortunately it's just not meeting expectations based on the food we know he's capable of cooking. We dined on a Saturday night with another couple for a table of four. The dining room is very nicely decorated and overall the ambiance is nice but we did note the tables are too close together (especially the four-tops). Overall service was pretty good - the staff is friendly and welcoming but we did experience some delays in between seeing our server to request additional items etc. The quality of the ingredients being used is obviously very good. The reason for my downgraded review is that nearly every dish we ordered was bland and needed seasoning (especially salt). It's as if they're catering to the elderly crowd inside of the casino (upon entering we immediately noted the average patron age appeared to be well over 70) who are notoriously allergic to food with flavor and salt. We started with the wagyu meatball and the smoked burrata. The meatball was probably the best thing we had all night as it's properly seasoned and in a nice marinara. The burrata was a nice presentation but needed salt. They also bring out a complimentary housemade focaccia for the table which is quite good. For entrees I ordered the orecchiette pasta and the wife ordered the chicken parmigiana. My pasta was listed as having "house duck sausage, charred fennel, chile and white wine". The sausage was unfortunately bland and frankly I couldn't detect any of the other listed ingredients especially "charred fennel". The chicken parm was also pretty flavorless and the accompanying pasta was in a plain tomato paste that was frankly barely edible. (Where's that tasty marinara that was on the meatball???) For sides we ordered the broccolini and the Brussels sprouts. The sprouts were actually quite tasty in a nice sauce. The broccolini was so bland I'm not sure it had touched even one single grain of salt during preparation. For dessert we ordered the sticky toffee date pudding and while it was nicely prepared it was (you guessed it) very bland. One positive aspect I can report is that the wine list is well crafted and the prices (glass and bottles) are very reasonable. Overall just really disappointing and we certainly won't return. The food at Al Solito Posto just a mile down the road is infinitely better.

Absolutely great service. I came to celebrate a birthday with a group of 10 friends. We are from California and had a great time. Food was amazing, the cheese on the pasta was so delicious and creamy. Best cheese that I have ever had. Our server Megan S. was tentative and friendly. Such a perfect night and glad we came to this restaurant.

Nice ambiance, we were a party of 3 & preferred the tables, as the booths were too tight. The food was spot on & we all enjoyed everything! They start off with complimentary focaccia- delicious! We ordered calamari & crostino. You must experience the Caprese for the table! We had the gnocchi pesto, rigatoni vodka(added chopped sausage), orecchiette & a side of Ripeperonta. Everything had wonderful flavor & the table side caprese salad stole the show with the presentation & flavor! The service was great too. We had frequented one of Fabio's restaurants in Moorpark, CA. We are SO happy he has opened up one here! Please consider offering the martini flight, like Cafe Firenze had.

Everything we ordered was delicious. My favorite was the Polpo and as basic as it sounds their Fettuccini Alfredo was surprisingly good. The complimentary bread is amazing, I don't even think you need your olive oil and vinaigrette. You have to try and order their Tiramisu, this was the best and a good size to share.. Our server Lily, she was amazing and attentive. The ambiance was good and gave it a fine dining Italian restaurant vibe.

This restaurant was in the adjacent hotel property (JW Marriot Summerlin), although it is billed as located in the Rampart Casino. ai Pazzi is part of the restaurants managed by celebrity chef, restaurateur, and television personality Fabio Viviani. We had previously eaten at his Los Angeles restaurant Firenze Osteria, which is now closed permanently. The place is billed as an elevated Italian dining experience. Later dinner (830 pm) reserved through sevenrooms.com or opentable.com. Very spacious. Has several well appointed tables, comfortable leathery suede like seats. All tables had settings of rustic plates, wine glasses at the ready. I found it very interesting to NOT see any condiments cluttering the table. There is a limited Kids menu, but our little one got a special accommodation : she wanted pasta with white sauce (Large rigatoni with alfredo sauce). My companion & I shared these dishes: - Table Side Smoked Burrata ($22.00) - a most delicious Bacon & heirloom tomato jam, (*My daughter felt it was a tad too sweet but I scraped the plate entirely with the complementary freschetta bread toast) - gnocchi with pesto ($27.00) , and shrimp. Tender bites of gnocchi & shrimp. - Maialetto ($42.00) - a thick at least 1/2 inch if not more, well cooked and tender Grilled pork chop, roasted pepper romesco, peperonata, cipollini agro dolce adn roasted stalk of broccolini. there was a nice crust of pepper/salt on the whole steak. Got these cocktails - Paloma Di Roma - $16.00 Corazon tequila blanco, montelobos mezcal, simple syrup, grapefuit juice, splash soda - served in a salt rimmed glass). I finished my drink and could have had another. - and Fiore Fiorentino ($15.00) Milagro tequila blanco, italicus, lemon juice, lavender syrup, soda. Dessert was Lemon Ricotta Cake ($15.00) Warm sponge, champagne macerated strawberries, mint, vanilla bean, chantilly cream - also scrumptious. Excellent service from Heather. There are several tableside presentations - (Caprese salad and Fettucine Alfred for two) for next time! Food: 5 Service: 5 Atmosphere: 4

Thought it would be another celebrity chef Italian venue with just hype. I was wrong. Portions are massive. Venue is brand new and clean. Service is already performing (great work Jose). Free bread? Surprisingly yes and absolutely delicious. Calamari portions were large and crispy. Meatball is a must since rigatoni isn't meat. Rigatoni was piping hot - added peppers on and it was delicious. Brussels sprouts were an interesting flavor with dash of Asian in it. Cocktails were spirit forward. Wanted to try the Tiramisu but was too full. Very good restaurant with large portions and fun staff. Was worth leaving the strip.

LOL. -This was my 3rd time eating here & the food is always delicious. -The Frutti di Mare w/ black squid ink pasta hit the spot. -I also enjoyed the calamari which has a light crisp to it. -The pork chop is huge & it was cooked perfectly. -This is a local hotspot. -The latest commercials are a nice spotlight on this hidden gem in Rampart Casino/JW Marriot Hotel. -Our server (Amy?) was very professional & courteous, there were some rude guys talking loudly on their phone w/ the speaker on & she kindly apologized for their behavior & the situation was quickly reconciled. Overall, make sure you make a reservation bc this place is very popular & busy!

This place was amazing!! We had dinner here and was blown away with most of the food. We ordered the table side caprese salad and they made the mozzarella at the table! It was a fun little show and a delicious appetizer. The Caesar salad was phenomenal. I don't typically even like Caesar salad and I loved it and can't wait until my next visit to order it again the focaccia was super good as well, served warm to the table. The steak was okay, not the best but wasn't terrible.

I rarely leave negative reviews, but this experience was unacceptable from start to finish. We had a confirmed reservation for 7 at 6:45. The restaurant called two days before to confirm, which I missed, but I responded promptly to their text confirmation. I even called the hotel to double-confirm, and verified again through OpenTable. Everything seemed good to go. On the day of, they called an hour before but left no voicemail. When we arrived, we were told they were "packed" and couldn't seat us for *another hour and a half.* The host actually told us to "look around and see" how busy it was, as if that excused the fact that we had a reservation. Since we had clients with us, I asked if they could seat just four of us, and they finally agreed. But after only five minutes at the table, we were told we had to move because they were pushing our table together for a party of six. Completely unprofessional. We were then shuffled to a booth. The food itself did nothing to redeem the experience--it was bland and forgettable. For a place that clearly wants to position itself as fine dining, they completely failed on service, hospitality, and quality. There are too many other restaurants that value their guests' time and business. We won't be back.

Stumbled upon a Facebook post about this place. Had no idea it was there or even coming. Hidden gem! My husband and father are from Sicily, they both cook, and I grew up in a family restaurant... to say I'm picky is an understatement! Simply an amazing Anniversary dinner celebration! We celebrated with our 2 younger kiddos and had a wonderful time. The restaurant is very pretty inside. Not too loud considering how packed they were. We were able to carry on a conversation and actually hear each other. The kitchen is wide open, we could not hear anything going on, and I don't remember any music playing. Service was on point! We had 2 servers Gege and I apologize I forgot the other female helping us. They were attentive and friendly. We kicked off the night with Positano Paradise, refreshing take on piña colada with vodka vs rum. And switched over to Montepulciano, it was very nice bottle. Kids enjoyed their lemonade. On to the food... bread service was warm homemade fresh olive oil cheese focaccia. Our tableside Caprese was a big hit! Kids were very excited to see it and equally excited to taste it. It was Delicious! We also had 2 orders of Polpo. We are big fan of octopus and knew it would be one tentacle. Ours was overdone and little too charred for us. Next time we will try the arancini and skip the polpo. We loved the homemade Rigatoni Vodka. The creamy sauce with the option to make it spicy was delicious! Ossobuco with saffron risotto was not traditional veal shanks ossobuco. It was pork and fell off the very large bone, it was delicious and big portion. They have a Kids menu too with plenty of options. One had the Bolognese, which was not the traditional ground beef sauce. It was the Sunday let it cook all day short rib type of bolognese sauce. Which was perfect for our son as that's what he's used to. Other kiddo wasn't feeling Italian this night surprisingly and had the chicken tenders and fries. Great portions for both kids. As it was our anniversary Gege surprised us with a firework(*real big sparkler) dessert with cannoli, which is our favorite! The shell was perfect crisp, and the filling was the perfect consistency. Not overly sugary. The kids had the Toffee pudding, which was devoured before I could taste it. Assume it was equally as delicious. Overall it was amazing dinner, we left stuffed! I've been sharing the news with friends and parents at the kids summer camp. This is strip quality food/service/ambience at affordable pricing! We are looking forward to coming back, and bringing my father. Hope to see veal parmigiana added to the menu for my father to order on our next trip.

Overall, a pleasant experience with a few minor issues. The interior is stylish and the open kitchen adds a nice energy to the space. Service was attentive and the staff seemed knowledgeable about the menu. The fresh bread served at the start was a great touch and one appetizer really stood out with its texture and flavor. The mains were solid well prepared and flavorful, though not particularly memorable. One pasta dish was a bit too spicy for my taste, but others might enjoy it. There were a few small hiccups, like a delay in service and a somewhat noisy atmosphere that made conversation harder at times. With a few adjustments, this place could easily reach the next level. Id consider coming back to try more of the menu.

A disappointing visit. The porterhouse came out totally well done (asked for Medium) and they slice it, so they had to have known any yet, they still served it. They remade the steak, however, it came out after we were finished eating and this time it was very rare. The fettuccine Alfredo was also very overdone and mushy. For some reason, the cocktails seemed off (like they were made with well liquor instead of the brand we had requested and were charged for). Two of our other entrées were good as was the focaccia, but not enough to warrant a second visit.

Beautiful new restaurant close to self parking (always a bonus!). We split a Caesars salad; Halibut & Fruitti di Mare entrees. Both were delicious with generous portions! Staff were gracious - so nice to see familiar faces! PS... I was SO puffy the following day which I'm attributing to the Fruitti di Mare. Be cautioned!

I was so excited to come here but was really disappointed with the some Of the food. Let's start with the positive, the caprese table side was delicious. Hands down one of the best caprese I've ever had. 3 of us, had the lobster linguine and my other friend had the Filetto de Manzo. All of our food were very very salty. The pasta was overcooked and like I said , everything was salty. Tiramisu however was very good. Service was top notch. Ambience was also good. Would I ever go back? Unfortunately, no.

We tried this place out for the first time and although not every item was perfect the service totally made up for it. We had Megan as our server and she greeted us right away with a big smile. We started with the smoked burrata which was delicious. Then for main course i ordered the orecchiette with duck sausage and fennel. It was fantastic. Unfortunately my husbands milanese halibut was not great. The batter wasnt crispy like milanese should be but Megan offered to get is something else right away. My husband just finished my pasta for me as it was a large portion and we ordered dessert instead of another entree. We had the sticky toffee pudding and it hit the spot. After we paid Megan thanked us again and brought is some prosecco to say thank you again. We will definitely be back and come just for her and her outstanding service!!!

What a lovely dining experience. Marty and I took a chance and got in at5 pm. Love,y sorta formal decor at the new restaurant at JW Marriott and Rampart Casino. We shared a chopped salad very tasty and very large portion. We then shared the zipper de peace. Great sauce and more than enough for us. Rory our waiter was so pleasant and there to assist. Very friendly staff. In fact one of the chefs brought out our seafood dish. They have added some upbeat serving ideas like a person who stretches mozzarella and does a very complete show . So we will return for sure. Also reasonable prices.

We had the fettuccine for two, the calamari, chicken tenders, and tiramisu! The food was awesome! Best calamari in the area and we killed the fettuccine. Tiramisu looks great too. A long long time ago in the galaxy far far away, there use to be a restaurant named Café Firenze in Moorpark, California. That was the first of what would be a stepping stone for a Fabio Viviani and all his culinary creations. I use to live right down the road in Ventura and we would go there all the time for everybody in my family's birthday, their brunch on the holidays and other events or just to have a really great Italian dinner. Fast-forward 12 years later and I find out three days ago that Fabio is opening a restaurant in the Rampart Casino, which is connected to JW Marriott in Summerlin. The grand opening is not till July 12, but we had the opportunity to come in tonight and I was definitely not disappointed. I asked not hoping for any luck of a drink from Café Firenze that was not on the menu here. Next thing I know the floor manager or executive chef or whatever his title was by the name of Mike came over and he could not have been any friendlier or any more helpful. He brought us over three glasses of Fabio's own made Prosecco, which was very nice. We started with the table side Caprese, which was good, but we all felt because the mozzarella was warm from the water. It actually tasted better as it came to room temperature after a few short minutes. We had chicken Parm, Osso Buco and Orecchiette. We also shared an order of the short rib Agnolotti which reminded me of the short rib raviolis, he used to have back at Cafe Firenze ( these are not to be missed). The whole time besides our waitress the bus boy and others came by and made sure our table was always clean and that we had freshwater, etc. So we were celebrating a birthday and they brought over a little firework sparkler with three baby cannolis which was different and fun. We also ordered several of their desserts and they were all phenomenal. Which ones did we get... You'll have to try them and judge for yourself. This was a soft opening so anything that might've been a little bit off was not that much and really everything was pretty much on point. I plan to come back and support Fabio like I did when he was in Moorpark back in the day. When you get a chance, you definitely need to come here and check it out. You can't go wrong at all with somebody who grew up in Florence Italy, and came to America to share his culinary dreams with all of us.
