Michael Aiello Dairy is a family-owned business that makes cheese in New Jersey and sells to restaurants and stores around NYC, but you can also call ahead or swing by for some excellent dairy. Your mozzarella will be sold to you by someone whose family has been making cheese for over 40 years, and it’ll be low-moisture, so perfect for pizza. Get a ball of mozzarella ($5) and a container of burrata ($6), and have a cheese-forward day of tomato and burrata salad for lunch, and a homemade pizza for dinner. " - Willa Moore
