AKA to SHIRO

"The chef uses two types of vinegared rice: red-vinegared rice for tuna and blue-backed fish, and white-vinegared rice for shrimp and white-fleshed fish. The red vinegar is a style popular in the Kanto region, while the ‘white’ vinegar (rice vinegar with sugar) is a Kansai speciality with strong roots in oshizushi. The combination of red and white, east and west, creates a dialogue between variations, respecting the spirit of each. Aka to Shiro also means ‘red and white’." - Michelin Inspector

Great experience and assortment of food. Staff are friendly and explain the ingredients even though we couldn't speak Japanese. You can definitely taste the freshness of ingredients. Squid sashimi is my favourite sashimi and the one they served was on a whole other level. The grilled eel was a bit too salty though

Visited on March 3. Michelin guide featured. Awesome experience with my family visiting me from France. I’ve tried several upscale sushi spots, but the price-to-quality ratio here is on another level. - Menu: 8,800 JPY omakase. - Dishes: Everything was perfectly executed, and the flow was smooth. The taste and seasoning were impressive. I still remember the taste of the fluffy castella cake that topped off our experience. Insane. - Drinks: The nihonshu (sake) selection was superior to other restaurants we’ve tried. We tried the following: Hitakami Tobin Daiginjo, Chou Karakuchi Daiginjo and Hiokizakura Suikyō Junmai Omachi (our fav). - Service: The staff was friendly, especially one lady who had worked in Paris. - Atmosphere: The counter seating is obviously a highlight as you sit right in front of the chef, but we opted for a private four-seat table for privacy and laugh. - Booking: Advanced reservations are highly recommended, though there were two empty seats at the counter on a Saturday. - Personal opinion: I would have loved a slightly better balance of rice and fish in each piece, especially for the starting sushi, which had a very subtle flavor.

As customers have mentioned, the food was amazing. However, I was shocked by how poor the service was. My sister arrived late, and she was refused water by our server. Our server told us we would each have to order a drink from the menu before she would serve my sister water. Previously, I was able to order 3 glasses of water for our myself, my friend, and my boyfriend. We emphasized we wanted water, “mizu,” for my sister, but we were declined. We had to repetitively ask our main server and another server 3 times in total to bring water. For a restaurant that is on the Bib Gourmand recommendations, this was unexpected. It’s unfortunate that the service was this poor, as the food was incredible. Additionally, if the restaurant wants us to order drinks, they should have informed us from the moment we sat down instead of withholding water for one person.

Aka to Shiro is, without a doubt, the best sushi and dining experience I’ve ever had. The simplicity of the dishes highlighted their natural beauty without unnecessary embellishments. The waitstaff were attentive and made an effort to speak English, ensuring I felt welcome and understood throughout the meal. The chef’s refined skills were evident as he calmly and effortlessly prepared and plated sushi to order for myself and 11 other diners. Despite the precision required, he maintained a composed and collected demeanor, making the experience even more impressive. Each course was a single, perfectly crafted bite, and while the dinner progressed quickly, the pacing felt ideal for savoring each moment. I spent time taking photos and recording details to remember this incredible experience, and the staff were patient and understanding, recognizing their customers’ desire to capture such a memorable evening. If I had more time in Osaka, I would absolutely choose to dine here again. It’s an experience I will cherish and highly recommend to anyone visiting the city.

This was our first tasting in Osaka and did not disappoint. I can definitely see why it's on the Michelin guide. We enjoyed the presentation and quality of the food. We didn't love grilled dish, but would definitely try again if we were in the area!

Just the best sushi we had in Japan. It was so well rated on tabelog and bib gourmand. There were so many tastes and textures. Personal favourites were the squid and tuna, even the egg in dessert was so surprising, fluffy. Right from the sashimi starters we loved this place. The chef and the staff were so welcoming, talked very good English and took their time to explain each dish. Thank you! 夕食はおいしかったです

Hands down to a great + value for money omakase place I haven’t experienced in a long time. Superb quality ingredients. Love how the chef is so happy and passionate at what he does. Staffs are also cheerful and providing great service. They can speak decent English, good enough to explain the dishes. Totally recommend.
