The Biggest New Las Vegas Restaurant Openings, May 2025 | Eater Vegas

"Led by a chef drawing on flavors from Mexico City, this vibrantly designed Neonopolis restaurant offers outdoor seating overlooking Fremont Street and a menu focused on bold, rich tastes. Highlights include duck confit carnitas, chicken breast in an earthy mole with pickled onions, Gulf shrimp in spicy chipotle butter, and sizzling platters of chicken, steak, and shrimp fajitas meant to be loaded into tortillas with guacamole and sautéed peppers." - Janna Karel

From the moment we walked in, we knew we were in for a treat. The atmosphere was warm and inviting, but what truly made our experience exceptional was Alex, our waiter. Attentive, knowledgeable, and genuinely friendly. He elevated the entire evening with top-notch service and great recommendations. The food? Absolutely phenomenal. Every dish tasted authentic and packed with flavor. It’s clear the kitchen takes great pride in using fresh ingredients and traditional preparation. The highlight of the night was the margarita—perfectly balanced and refreshingly smooth. Easily one of the best I’ve had. We capped the meal with their house-made flan, which is prepared fresh daily. Creamy, rich, and just the right amount of sweetness—it’s a must-order if you visit. I wholeheartedly recommend this place for anyone looking for a delicious, authentic Mexican dining experience. We’ll definitely be coming back when in Vegas.

Loved this place! The mole chips were incredible, and the beans were so good I wanted more. The Tropical Margarita was delicious. Great view of Fremont Street from the third-floor patio. I’ll definitely be back!

Brentlee was an amazing server. Gave great suggestions and was so friendly. Chef Paco came to our table personally to wish my friend a happy birthday 🎂 and gift her with a delicious flan. This place is great. You must try it!

Stellar food, drinks, and views at this newly-opened Authentic Mexican spot! We were lucky enough to speak with Chef Paco himself and he is so kind and obviously very proud of this new spot, as he should be! We had chips with mole sauce (so developed and chocolaty) and salsa. The salsa has so many layers of flavor. Freshly made with a kick but not so much it deters from all those veggies flavors packed in. We also tried the panuchos with guac, onion, slow-roasted pork, on a perfectly fresh corn tortilla. Amazing! The chicken mole was comfort food. Dreamy, creamy mole sauce and beans/rice just like you were transported to a family meal in Mexico! The short rib entree with mashed potatoes and veggies was an elevated dish that was instagram-worthy and fall-off the bone incredible. A small flan dessert, topped off a truly perfect and memorable meal thanks to our attentive and friendly waiter, Jose, and host, Chef Paco. Drinks are a must here. Honestly, we have been to Fremont for drinks many times and the Mezcalita is hands-down the best of Fremont. For those who like a little kick in their drink, the roasted pepper margarita is just the right balance of sweet and spicy. Both drinks were perfect for lounging at the outside bar, high atop the hustle and bustle of Fremont. Even if you aren't wanting a full meal, we highly advise that you sit at the outside bar and enjoy a perfect drink with folks who genuinely appreciate you being there. If your experience is anything like ours, you will immediately feel like family!

We dined here on Wednesday night! Our experience was excellent! The restaurant is up on the 3rd level and has an outdoor patio dining area where you can look down on Fremont Street. Our waitress Claudia was friendly and knowledgeable. Chef Paco stopped by our table to introduce himself and welcome us to his new restaurant. Our food was delicious, top tier! We tried their house made guacamole, their chicken fajitas and several other dishes. Portions were generous and offered at a decent price! I loved the decor and our group had zero complaints! I hope this restaurant becomes a staple for many years to come!

Google
A must stop when in Vegas. We come to Vegas all the time and first time here, bc it's kinda out of sight. But when downtown you have to stop in. I'm a huge mole fan, and this is some of the best I've had. We had Nelson as a server and he's awesome! Super attentive and very friendly. Highly recommend and we'll be back!

Google
One of the best meals we have had on our trip. The restaurant has only been open a few days and we found it from the 5 star google reviews which are all thoroughly deserved. It’s definitely a hidden gem in downtown Las Vegas. it’s on the second floor of a shopping centre if you don’t find it straight away don’t give up as it’s definitely worth it. We were met by chef Paco when we came into the restaurant and he explained he wanted to deliver authentic Mexican cuisine and he definitely does. The food was absolutely delicious and the cocktails tasted amazing. Fantastic service from the server and chef Paco came out to see us a couple of times to check we were happy with everything. I am vegetarian and the server explain the options to me and also the different types of sauce and flavouring I could have on my enchiladas. I opted for the green which was delicious. I would highly recommend this restaurant to visit if you are in downtown Las Vegas.

Google
Great overall experience, we really enjoyed the food, the service was brilliant, and the overall atmosphere was very lively. we got mole and tortilla chips which was really good, then I ordered carne asado plate, and my friend ordered the spicy shrimp dish - we both really enjoyed our meal. Would definitely say to give it a try if you craving Mexican food

Yelp
We came here on Saturday evening. We had pozole and quesabirria tacos and they were amazing! Juan was our server and he was very attentive and very kind. Chef Paco came out to check on us and see how the food was. The place is decorated well and has a pretty unique mural. You can see Fremont Street from the restaurant. Overall our experience was amazing and we can't wait to come back next time we are in Vegas.

Yelp
I had the tortilla soup, mole, and the flan. All were absolutely wonderful. If I find myself back in Vegas, I'll definitely be stopping here again.

Yelp
Such an wonderful spot! Large venue if you wanted to dance. A very pretty place! Located on the 3rd floor just so no one gets confused like us lol Our server, Claudia is amazing at her job. You truly can tell she cares about what she does. She made our dinner fun and gave us a great experience. Chef Paco came to our table and he was very kind! Would definitely bring more family and friends back.

Yelp
Las Vegas Restaurant Week 2025 adventures continued with dinner at Alebrijes Cantina by Chef Paco at the Fremont Street Experience on Wednesday, 6/11/25. This restaurant was hard to find! We looked all around based on the address for the restaurant. Couldn't readily find it. Had to call and ask for directions. It's on the 3rd floor down in an "off-shoot" of Fremont Street. There's no visible signage for the restaurant until you walk down towards Denny's. Then you see a sandwich board type sign. $40 dinner: Started off with the runner brining us a little order of chips and mole. YUM! Very good mole. First course: I ordered the Panuchos: homemade corn tortilla with black beans Cochinita pibil, fresh avocado, pickle onions, and queso fresco. Delicious and savory. The meat was moist and the corn tortilla was light and airy. Second course: I ordered the Mar Y Tierra Tacos: Corn tortilla with toasted cheese, guacamole, chipotle ancho dressing, salsa pasilla, steak, grilled shrimp, bacon, cilantro onion, and queso fresco. The steak on this one was a little over cooked but the salsa pasilla and the chipotle ancho dressing helped. Nice surf n' turf tacos. Great flavor. But the corn tortilla fell apart easily so made it semi-messy. Third course: Flan: Chef Paco's family recipe, available in 2 amazing flavors: traditional vanilla or coffee. I ordered the coffee flan; which was a dense flan with a very light coffee flavor and the caramel sauce under the flan worked well together. The restaurant is decorated very authentically "Mexican" and the various little figures through-out the restaurant were super colorful and great mural artwork by the stage. Our server was super friendly and attentive. Quick to get our orders out to us and get us whatever we requested quickly. Very good experience and priced well.

Yelp
My boyfriend and I were heading down to Fremont Street and were in the mood for Mexican food. We noticed this place on the second floor so we thought we would give it a shot. We got seated right away. The hostess was very nice. The restaurant was actually bigger than I thought it was. They also have outside seating. They have both table and booth options. I did notice a very small stage so I'm not sure what events they may have there, but they may have some. We were greeted pretty quickly when we sat down and given our menus. My boyfriend and I got tacos and a burrito. We did order a soup, but unfortunately, it came out cold and because it seemed like it was microwaved when it came back to us, and not fresh we ended up sending it back. The tacos were absolutely delicious. One of the best tacos that I've eaten. The steak was tender and very flavorful. The burrito was also very good. We did have a nice waiter. Though there was quite a bit of time where the staff got busy and we were waiting quite a long time to be checked on. I did feel like if we sat outside we probably would've been helped a little bit quicker. It was a little surprising to me that ourselves, and only one other couple were inside at one point and with all the people working there, no one came to check on us. The portions were a pretty good size. The tacos were so good though I do wish it did come with four tacos. The chef did come introduce himself, which was nice. I would come here again. I did like the food and there's a few other things that I would like to try. I do recommend coming here if you're in the mood for some good Mexican food. They do have restrooms inside, though I did not use them. They did have a TV on and some music playing. The restaurant was really clean and nicely decorated. It is located on the second floor. You can use the escalator to go up.

Yelp
I cannot say enough great things about this place. It's a must-visit spot when in Fremont. Although it's a little hidden away on the third floor, it's absolutely worth it. From the moment you walk in, the hostess warmly greets you. My group and I were quickly seated, and our waiter promptly took our drink orders while also suggesting some appetizers. We had a chance to look over the menu, and everything sounded amazing. Since I wasn't very hungry, I ordered carne asada nachos, complemented by a Paloma for my drink. My husband chose carne asada tacos along with a draft beer. Our friend joined us and went for carne asada and shrimp tacos, also with a draft beer. Everything was delicious, and the wait staff was very attentive to our needs. Towards the end of our meal, Chef Paco came over to greet us and brought us a complimentary flan. He was incredibly humble and shared that it was his mother's recipe. Before we left the restaurant, we spent some time talking with Chef Paco as he shared his inspiring story of how he became who he is today. It was truly humbling that he took the time to connect with us.

Yelp
Located on the 3rd floor of a very sketchy building. Should have gone with my gut to turn around and end this questionable experience. No surprise, there were no customers. Again, why not turn and leave? A sweet hostess/server quickly ushered us in and into a booth. No wanting to commit too much to this experience, we opted to not have cocktails and have ice water. Asked if we wanted appetizers and we said we're ok with complimentary chips and salsa. OMG, no free chips and salsa. Again, why stay? Fine, we ordered carne asada burrito and carnitas plate. While we waited for our food, the TV played mariachi and Spanish music videos. Then they opened the bar windows to let the 107 heat in. UGH! Our meal finally arrived. Let me tell you, after the first bite of my carnitas, I felt nauseous. The meat was spoiled. We told our server. All she offered was 'Oh'. No apologies, no refunds. The burrito had more rice than meat. Overall a really bad experience. My husband and I paid and quickly left. We were lucky not to have food poisoning. Couldn't believe that the small portion of spoiled carnitas cost $30. Next time I would go with my gut and turn away. So many red flags to avoid this place.

Yelp
Fantastic place, 10 out of 10 would recommend. Arrived at 5:45 on a Monday and hardly anyone was in here. Walked right in and got food. Great service great food.

jessica

Yelp
Delicious food and great drinks. Super clean restaurant. Restaurant was pretty empty not sure why , this place has great potential. I just think maybe they need to make better signs on how to get to the restaurant. It's on the 3rd level at the corner which has great views of downtown .
google avatar

Michelle U.

Yelp
Husband and I went to try it out for date night. The decor and ambiance were fantastic! Service was spot on... unfortunately, for my husband and myself, the food was subpar. I got the chile rellano with rice and beans. The chile rellano was overcooked and underwhelming. The rice was a bit on the crunchy side. My husband ordered the shrimp tacos. He said they were alright, but nothing to get excited about. We also ordered the guacamole and chips. The guacamole was clearly not made to order, it seemed like it may have been made in the morning and that's what was still there at 7pm. I know they have only been open a month, so I think we will wait a bit so they can work their kinks out and maybe we will try again.

Lisandra A.

Yelp
The flan is to die for, as is all the food. Claudia was super attentive, and so sweet. The restaurant is lit! 5 stars all the way!

Akane C.

Yelp
Super good food and drinks. Great view of Fremont street highly recommend ask for the Claudia great server.

Yelp
Love this place! Super impressed from the start. The chef sat us on the patio for an awesome people watching experience over Fremont Street. The service was excellent from the second Kayla greeted us. She was insanely knowledgeable about the menu considering they just opened. Everyone loved what the had to eat including the complimentary dessert they gave us! I can't speak for everyone by I know I will be coming back here every time I'm in Vegas.

Yelp
Wanted to try it out for Restaurant Week, but when we arrived there was no restaurant week menu and we did the math and it was going to be about the same so we ordered from the normal menu. I tried to the Enchiladas, and my bf ordered the Cilantro Garlic Shrimp, we also got the Panuchos and the Mole Chips for appetizers. The panuchos were super good! The meat was good and the shells were soft. The Mole Chips were also a good starter, definitely a traditional mole taste! The enchiladas were really good! They reminded me so much of my dads enchiladas, that have that homemade taste to them! Rice and beans were a good side! My bf said he liked my plate better than his shrimp plate and i don't eat seafood so i can't review those, but he was underwhelmed with the presentation and the sides. It felt basic to him, he also wished they were more saucy. We got the coffee flan at the end and it was super creamy! I was too full to eat more than 2 bites, but my bf enjoyed it. Overall it was a good experience! The service was friendly! They didn't bother us too much! But kinda took long to come around with the check, I was ready to go. The ambiance was very Mexican focused! They had Juan Gabriel playing then went to Sonora Dinamita! Restaurant was clean and it was kinda empty! We went on a Friday night and the restaurant is super spacious!
google avatar

Alicia G.

Yelp
Food was amazing, every single dish had a special taste to it, the mole reminded me so much of my grandmother's mole the taste of peanuts and chocolate was amazing. The restaurant decor was amazing, the bright colors took me back to my childhood. Entertainment was fantastic. Great experience.

Our server brentlee was amazing accommodating every request with a smile he ensured we had everything we needed and made the evening special. The Food was absolutely delicious 10000/10 "Churros are a must try"
google avatar

Ashley R.

Yelp
Food was amazing! I got the alebrije salad with chicken and it was delicious. My husband ordered the mar y Tierra tacos and he said they were also great. The ambiance was beautiful-picture Disney's Coco, but in restaurant form. Alejandra was our server and she was very sweet and attentive. We also got margaritas-passion fruit and mango. Probably the best margaritas I've ever had. I already want to go back! HIGHLY RECOMMEND!
google avatar

Yelp
Big shoes to fill here - this top floor space is beautiful - and gigantic. Let's hope this high caliber cuisine will convince enough folks to explore the ruins of neonopolis to find it.

Yelp
Food, Drink, Service was all 10/10! If you're downtown, make sure you visit this spot! The food is amazing! The drinks are perfect! And the service is unbeatable. Kayla was the best On top of that, the location is really cool, inside and out. Chef Paco was amazing, greeting and talking to us himself. He's got some great ideas and we're excited for the future of this restaurant!
google avatar

Luisa C.

Yelp
We went today to Alebrijes and it was amazing. Our server Kayla was very attentive to our request. We ordered some fajitas (not pictured), the Mar y Tierra, and some piña colada. Definitely authentic Mexican food. We had a flan delivered to our table on the house. The flan was very creamy and delicious. Chef Paco came to our table to greet us. If you're in downtown Las Vegas I recommend you to try Alebrijes.

Yelp
A New Mexican restaurant that serves high quality food with fresh ingredients. Beyond happy this place exist as I stay nearby for work and they have late hours. Staff is beyond hysterical and kind. Yelp
Stepping up to the main counter we were engaged by a friendly face expressing their gratitude for coming to the restaurant, we are shortly lead to our table, which was an overlook of Fremont Street. Within a few moments we were greeted by our waiter where we ordered drinks and a few apps. The restaurant had a nice laid back old school feel which was nice to hangout and relax. We were told there's live music after 10 however there was no live band that night. Less than 20 mins after ordering our drinks and apps they arrived to the table, we ordered some chips and chicken nachos. All were good and had an authentic taste to them, we chilled on the overlook area and enjoyed the nice weather and good food before heading out. The experience was complete and proper, I talked with Chef Paco and he seemed like a very nice guy. If you go to Vegas and looking for some great food I highly suggest Alebrijes.
google avatar

Alma R.

Yelp
The decor is colorful and bright! We ordered the pozole and it was perfect. The right amount of spices to make it delicious. The staff were friendly and attentive.
google avatar

Erica A.

Yelp
5 Stars. Our server Kayla was awesome. If you're looking for authentic, flavorful Mexican food served with heart, this is the spot! Every dish we tried--from the street tacos to the enchiladas--was absolutely delicious and clearly made with love. The homemade salsa had the perfect kick, and the margaritas were spot-on. The service was incredibly friendly and attentive, making us feel like family from the moment we walked in. One note: it was a bit warm inside, but honestly, the atmosphere and food more than made up for it. Just dress light and come hungry! Highly recommend for anyone craving a cozy, satisfying meal that hits all the right notes.

Amanda A.

Yelp

Yelp
Braised pork tacos were delicious. The pickled onion balanced the spice in the dish nicely. Perfect pairing with the house margarita. Service was on point and our server was able to answer any question we had which was very helpful. Slightly tricky to find among the hustle and bustle of Fremont Street but worth it. We'll be back for sure.

Yelp
This is second time going to Alebrijes. I had the duck tacos for dinner that were savory and delicious. Guacamole and Chips were perfect with beer and margs. Service was excellent and I was impressed that the Chef Paco stopped by the Bar to make sure I was satisfied. Fun ambiance and will be back again. My favorite mex in LV.

Yelp
Excellent and friendly service provided by Jose. Chef Paco's warmth and friendliness is exceptional. The mole is exquisite, the guacamole is creamy. The Panuchos with cochinita Pinil are tasty and unique. The Duck carnitas are very original and delicious. You must make room to try the flan! This restaurant has a beautiful and relaxing outdoor patio.

Yelp
OK, let's start off with the atmosphere. It was a wonderful wonderful atmosphere to have dinner. Even though it was 102 outside the inside and with the breeze and the fan and everything going through the restaurant, it kept us nice and cool. The service was top-notch. It was almost like we had every waiter and waitress in the restaurant waiting on us. They were prompt with their service prompt with the food and not only that we did get a special visit from Paco himself and he said his house is our house too . That was a nice welcome tree. Now for the food, my wife got the cedar grilled salmon and it was cooked to perfection. The portion was a little bit more than what she could handle and she felt really sad that she left some of the salmon on the plate, but it was really really good. I myself just stayed with the chicken quesadilla because my stomach can't handle all that spice and it was cooked to perfection as well good for size and everything else. Then we got a surprise we were just sitting there talking and a waiter came up to us and said compliments to you too. This is for us and it was a dessert of flan and it was really tasty as well. Nice light and airy is very smooth and taste delicious . When we spoke to Paco, we told him that anytime that we're in Vegas. We're eating here. It was a wonderful fine on a adventure night. Recommend 100%.

Lindsay G.

Yelp
Simply put, it was good but not worth the price tag. I guess Fremont Street is no longer immune to Vegas's exorbitant prices. $30-40 per plate for most entrees, $21 for queso, and $16 for guac. I don't love that their drinks and some dessert items don't have a price on the menu, which is a QR code. The best part of the tamarind marg was the tajin rim and tamarindo straw. Although it was a nice touch that the staff saw we were there for a special event and gave the guest of honor a Mexican candy shot. Wouldn't go back at these prices.

Alex d.

Yelp
Great food and service. The best views of Freemont Experience from the rooftop ! Highly recommend.

Tina A.

Yelp
Let's start off with the Ambiance. It is beautifully decorated in traditional Hispanic decor, beautiful music in the background, not loud and overwhelming. Brentlee is our waiter, very attentive and personable. The food and drinks were delicious, and full of traditional flavors.
