Dinner at Alma by Juan Amador was an elegant, surprising, and deeply satisfying experience. Every dish that evening felt like a thoughtful expression layered, confident, and rooted in both European finesse and Asian precision.
The journey began with a trio of snacks that set the tone. The Amaer Arbequina olive with Amur caviar was briny and bright, a punchy bite that opened the palate. The gougère, filled with broccolini and Comté and scented with white truffle, was warm, fluffy, and indulgent. The ankimo with persimmon and buckwheat was a standout, creamy, sweet, and earthy all at once.
Then came the bafun uni with carrot and CATA coffee. At first glance, I didn’t expect coffee to pair with sea urchin, but somehow it worked, bittersweet, vegetal, and full of umami. The nama surko Palamós prawns with cucumber and Pecorino was light and clean, like the sea at first light.
Things grew more luxurious with the chutoro, paired with Kaluga hybrid caviar, burrata, and jamón. Rich on rich, but balanced. The amberjack layered with foie gras, wakame, and smoked eel was complex, smoky, and utterly unique. Then shin ika arrived, a delicate preparation of squid with chervil root and abalone liver that melted with warmth.
The hot dishes continued to impress. White tilefish with hamaguri clams, kabocha, and passionfruit brought a mix of sweet, tart, and briny. Shirako, with toasted rice and girolles, was creamy yet earthy, with the mustard cutting through at just the right moment.
My main course was the highlight. The Kumamoto A4 beef (yes, I went for the supplement). Paired with polenta, cepes, and jus, it was pure indulgence tender, unctuous, and unforgettable.
To close, a delicate, refreshing dessert: shine muscat with yuzu kosho, pear, and sorrel. Bright and herbaceous, it left the perfect final note.
The team at Alma was warm, knowledgeable, and paced the meal with grace. The setting is intimate, tucked away in Goodwood Park Hotel felt like a quiet little world where time slowed down.
Every course had a story, and together, they formed a beautiful, thoughtful experience. One I’ll be remembering for a long time.
