"I've followed Amado Grill’s on-again, off-again development: chef Ignacio Mattos’s long-anticipated fine-dining project at the Nine Orchard Hotel is now set to open in early 2024. After briefly being shelved so the team could "recommit to the success of Corner Bar," the project is back on because the group felt they had the capacity to run it. The 38-seat dining room will serve a four-course tasting menu priced at $125 per person, and Mattos has described the concept as creating different "universes," one inspired by Twenty Thousand Leagues Under the Sea to evoke the serenity of diving. The aquatic-themed room is outfitted with plaster walls and upholstered banquettes, was designed by Fernando Santangelo, and features artwork by Harold Ancart.
