I joke that the holiday hasn't really started until the first taster menu and what a way to start! Loved every course of the Amara menu, including some dishes I probably would not have tried if it was left up to me. The wine pairing was great as well: as with the food, locally sourced options made for interesting selections that I had never had before. Knowledgeable, informative, enthusiastic staff. Do yourself a favour and go if on Seville!

Upon reading the glowing reviews, Amara seemed like the perfect choice for my dad’s birthday dinner in Seville. Unfortunately, we left secretly disappointed by the experience, mainly due to the service, which was among the worst we’ve ever had. While I understand that English may not be the first language of the staff, when ordering a set menu you’d expect at least some basic knowledge of the dishes and suggested wine pairings. Sadly, our main server seemed completely uninterested and unable to explain anything. Another waiter eventually stepped in and was slightly better, but the overall experience remained poor. Throughout the meal, our dishes were delivered one after another with little to no explanation, just single-word descriptions. However, the real issue came when our bottle of water, served in a chipped glass bottle, caused my father to cut his tongue. We believe he may have swallowed small fragments of glass. When we informed the waiter, they simply took the bottle away without a single apology or acknowledgment. From that point on, the service became even colder, our desserts were practically dumped on the table, and the bill was tossed down without a word. For what was meant to be a special birthday meal, the entire experience felt uncomfortable and embarrassing. Despite noting on the reservation that it was my dad’s birthday, there was no recognition of it whatsoever, no candle, no greeting, nothing. It’s a real shame because the food itself was actually very good. But service this unfriendly and careless completely ruins the experience. A restaurant of this standard should train their staff properly and never serve water in damaged glass bottles. Please see the attached photo of the chipped bottle. I sincerely hope management takes this feedback seriously, as no one should risk injury during what’s meant to be an enjoyable meal.

This was by far the worst meal we’ve had in our ten days in Spain. Almost every single dish was unbearably salty — just pure saltiness without the slightest balance or nuance of flavor. And as if that weren’t enough, some dishes were cloyingly, disgustingly sweet. Honestly, I have to ask — does the chef even have functioning taste buds? We couldn’t find a single dish that was remotely enjoyable. To make matters worse, the staff kept changing our utensils nonstop. For what reason? It made absolutely no sense and became downright irritating. With food this salty, you really don’t need to worry about “flavor contamination,” do you? What shocked me most was the complete lack of care from both the chef and the waiters. It felt like they couldn’t care less about the guests’ experience — just going through the motions, asking questions mechanically, without genuine attention. When I voiced my complaints at the end of the meal, I received no response whatsoever. That level of indifference is unacceptable and frankly, infuriating. By the way, the restaurant still has the spring menu hanging at the entrance, while the autumn menu can only be seen after scanning a QR code inside. Are all the staff blind? How can no one notice something so basic?

Tried the tasting menu for lunch and it was overall not too bad. Service was friendly and attentive (especially the lady). Some of the dishes were creative, interesting in flavour and presented well (highlighting the chestnut soup, artichoke sherry butter). However I won’t give a five star as some of the dishes were a bit too salty(especially the grilled pork terrine), and I think the menu could be more balanced with fewer dishes on the salty side. I ended up drinking a whole 1L bottle of water by myself. If the price had been a bit lower I might have considered a five star, but at this price level (medium) I have higher expectations.

Had a lovely meal here. Definitely go for tasting menu. You can tell that chef is skilled and knows what he’s doing. Friendly staff, very helpful and generous with wine choice allowing us to sample several before choosing. Slight negatives: The 2 main dishes didn’t seem as creative as all the others. Felt slightly strange having chestnuts in dessert on spring menu and they weren’t to everyone’s liking. Small restaurant with not much air so staff wanted to keep front door open which was a bit drafty and noisy for us being right by it. But these are just little negatives… really, you must go!!!

This restaurant is special. Every single dish sang with the story of where it had come from. The owner had such passion for cuisine from the Basque country and we learnt so much about local wines too. It's been a long time since I ate a meal where I felt so connected to the land behind the cuisine. Every single dish was a hit, but standouts for me were the egg yolk in foie gras sauce, the duck and the spiced apple crumble. The chef here is incredibly talented, introducing unique flavour combinations while showcasing classic skills. We loved eating here and couldn't stop talking about the food all the way home. The only things I tweak? A couple of this dishes were a bit over salted and I would have loved the lights just a little bit softer for ambience. Neither of these things took away from the overall experience, but the lighting could definitely make the restaurant look as welcoming and special as it is. I would eat here again and would send anyone I know who was travelling to Seville. I will remember this meal for a long time.

If you care about great food, skip the glitzy restaurants that line the streets near the Real Alcazar and the Seville Cathedral and walk a few extra blocks to Amara, a small, unassuming restaurant with five-star food. Everything on the menu (tasting or a la carte) is exceptional - from its renowned chestnut and garlic soup to a spectacular artichoke with sherry butter to a perfectly cooked duck breast with figs. Rest assured that you won’t be disappointed – no matter what you order. Amara’s owner, Javier Fabo, is the consummate host. He is passionate when he talks about Basque food, and every dish, every ingredient, and every wine on his menu reflects that passion. We stayed for three hours until the restaurant closed at five, and he then apologized for asking us to leave because he had to pick up his kids from school! Don’t miss this place. It’s a real gem!

One of the best dining experiences I've enjoyed to date. The set tasting menu was perfectly paced with each course featuring just the right amount so that you weren't feeling full too early. The lady serving us was great and explained each dish as it was presented. A must visit for foodies, should really be on the Michelin list!

AMARA is a cozy and intimate restaurant with tremendous attention to detail in flavoring, presentation, and service. Each dish was immaculate in its textures and flavorings (e.g. the croquettes were perfectly crispy-fried on the outside and indulgently creamy - but not heavy - on the inside), and the recommended wines were on point as well. The restaurant is small - call ahead for a reservation if you can - but spacious for the tables it has, and quiet enough for conversations even across the table.

Amara was the perfect stop on a hot day! The air conditioning was needed during this European heat wave and the food was some of the best I've had in Spain. From the ice cold beer, to the starters, to the vegetables, and finally the meat, everything was mouth watering and tasty! The service was outstanding as well! We have a daughter who is gluten free and they made ordering easy and even brought her a separate appetizer and gluten free bread to help her enjoy her meal and feel included with the group. Highly recommend this place to tourists and locals as well!

The best dinner ever in Europe! We had the set menu with cod and crispy pork belly as the main dishes. From the beginning to the end, everything was fantastic. Javier is not just a chef, he is a true artist in cuisine. Bravo!
