His intimate space on Zaragoza Street is an ode to his home neighborhood outside San Sebastián, for which the restaurant is named; on the walls, his mother’s paintings depict scenes from San Sebastián, and his father personally built the cabinetry with wood he drove down from the north. While the menu includes finessed versions of traditional Basque dishes, Fabo also pays his respects to the Andalusian pantry.
