The Best New Restaurants in Las Vegas, July 2025 | Eater Vegas

"This new Mexican restaurant at the Cosmopolitan delivers coastal Mexican food in a high-energy nightlife setting. The interior is dim and sultry with touches of fire and gold — setting the stage for chili lime lobster tails, birria short rib with corn purée, and cocktails like the smoke & mirrors with smoky mezcal and a hint of chocolate." - Janna Karel

Under the direction of Michelin-starred chef Jason McLeod, the menu has heaping servings of crispy chilaquiles and dishes like brioche churro french toast with tres leches custard. Morning cocktails mean grapefruit and sage mimosas and zesty micheladas." - Janna Karel

Lovely restaurant located within a hotel. The restaurant is situated outdoors but was somehow cool and comfortable. Beautiful surroundings, peaceful music, and wonderful staff. We just had apps and they were delicious. Nachos, hummus, and enchiladas were all on the happy hour menu and were full sized and tasty!

Dinner on a Saturday night with live music was amazing! Service was fast, food was tasty and entertainment was absolutely mesmerizing! Drinks were perfect! Choosing the whiskey in Old Fashioned is unique offering much appreciated! The cucumber mint mule was soooo good. The Lemon salmon was mouth watering flaky and so light and flaky. The chicken pot pie was equally as good. Perfect puff pastry crust and a creamy hearty sauce with plenty of chicken and veggies. We ended the night with creme brulee per the suggestion of our waitress and it was terrific!

Google
Rated only a 3 star overall because we decided to patronize restaurant only because website menu included lamb chops and duck breast at reasonable prices. When we arrived at restaurant neither dish was included on a very limited entree menu. Wait staff apologized for the misrepresentations on the website menu and were otherwise very pleasant and attentive. Food was better than average, especially the burger my spouse ordered. Won’t go back.

I want to start by giving a huge shoutout to Leidy, the server who made everything even better, if that was even possible. The boutique hotel in which the restaurant is located, is a jewel. One of the most beautiful in Santa Fe. They really paid attention to details, and restaurant Amaya is not far behind. Everything, with the exception of one of the two elk medallions on my plate, was exceptional. One of the medallions was a little overcooked and tough, the other one was fantastic. My wife and I both enjoyed the Hacienda Mojito, which is a great deal coming from two Miami long time residents. I strongly recommend the Chimayo Soup. The chile used in the soup is mild and has a surprisingly nutty flavor profile at the end. The queso fresco on top added a salty finish and stringy grand finale. DELICIOUS!!! The sesame crusted Salmon was well executed and came on a bed of risotto, which I thought was phenomenal. We also ordered the Cobb Salad. Props to them, as the salad was super fresh (no wilted vegetables) and the light and fruity dressing complemented it perfectly. My wife only orders Creme Brûlée for dessert, and while I hardly ever even try it, as I find it boring, this one was the exception. It wasn’t too sweet and had a nice creamy consistency expected of custards or natillas. They definitely know their desserts; however, my type of dessert comes in liquid form and it’s called Porto. Their Fonseca Porto 20 years really hit the spot and put an exclamation point on a great meal. I strongly recommend this restaurant.

Atmosphere: cracking fireplace, cozy dim lighting, subtle natuve american flute in the background. Beautiful decor and cozy seating. Food: phenomenal. Food was flavourful. The pan seared scallops had the perfect texture and flavor. The pork belly was a bit more tough than anticipated, but still delicious. Service: attentive, kind, helpful, and anticipated needs. Will be returning.

A well guard secret. Lovely covered outside seating. Friendly and attentive staff. Interesting menu items. Something for everyone

Google
Great experience! My husband and I ate here several times during our stay in Santa Fe and we enjoyed everything we ordered. Restaurant and bar staff were friendly, helpful and food came out quickly. They offer several vegetarian and gluten free items for anyone with dietary restrictions. We also enjoyed the Native American flute player who plays near the hotel bar and restaurant several times a week.

Google
What a delightful restaurant hidden in a hotel! Literally some of the best food in a lovely atmosphere with exceptional service in Santa Fe. I had a Watermelon Tomato Gazpacho, a Spinach Strawberry Salad with Fried Artichoke Hearts and Grilled Shrimp as well as an Almond Pear Tart with Vanilla Ice Cream. Everything was presented beautifully and tasted wonderful! I can't wait to go back and try other items on the menu. Thank you for creating such an incredible establishment.

Yelp
We had dinner there on Valentine's Day and it was wonderful! Great chef and wait staff! Also, enjoyed wonderful music by Nacha Mendez!

J S.

Yelp
One of the nicest / largest open air dining rooms in Santa Fe. Love the spa like music and evening events. The only thing they can improve on is a higher quality bartender. It's so hard to find staff in this town, but they need to invest a little bit more in the training of their bartenders.

Yelp
Friendly staff! Excellent breakfast choices. Great location for walking. Room is very comfortable with lots of towels.

Yelp
It was ok. In a hotel off the plaza. General food like french dip, steak, hamburgers etc. The service was fine, but not excellent. The dining area was an open ballroom so nothing special.

Patrick G.

Yelp
Made reservation with Amaya in reliance on the website menu which included reasonably priced lamb chops, duck and other items. When we arrived none of the entree items we were interested in were on the menu. I felt the menu items were limited. They offered one tempting steak item, but too big and expensive. Most other items moderately priced. The Margaritas were good. I ordered rigatoni/beef chunk dish that was OK. Spouse had hamburger that she said she enjoyed. The staff was very nice and were apologetic for menu issues. Ambiance was pleasant.

Yelp
Lovely atmosphere and friendly staff. We really enjoyed the duck and lamb. Shout out to Anthony who went above and beyond!

Yelp
AMAYA is absolutely a gem. We dinned here for two days as we were snow bound on the week of November 9, 24. We are frequent visitors to Santa Fe and the menu options, execution, presentation and cuisine are remarkable!! The service in spite of reduced staff due to the weather was incredibly on point. The dinning room is spacious and the scenery was incredibly beautiful, winter wonderland!!

Paola K.

Yelp
I have eaten many times at Amaya in the last 13 years and have never had any problems. Food , service have always been good and making me anxious to return. Regrettably my last meal was probably my last. It was Christmas Day, crowded , staffing was poor. The food was cold and not at all tasty.. I realize it was a busy holiday. The price of the meal was not worth what we were served . I was unable to have the dessert as I am lactose intolerant and was given some unripe pineapple which was uneaten. The staff was unhelpful and all in all the three of us were totally disappointed.

Val D.

Yelp
We made Valentine's Day reservations at Amaya 2 weeks ago . We arrived early and waited in the bar enjoying the ambience When we checked in for our reservation they said we couldn't be accommodated as there were no free tables. They told us we could get on a waiting list along with others who also had reservations and couldn't be accommodated ! A lot of upset people tonight . Extremely disappointing and very badly managed

Yelp
While staying at Hotel Santa Fe, arriving later in the evening we defaulted to dinner here. Nothing terribly wrong with the food, but nothing terribly right, actually wrong for The prices, , definitely no reason to dine more than once or if you just need sustenance while staying at the property. Buffalo Green chili burger- flavorless and under cooked Chicken pot pie- ya mama makes better Crème brûlée- over baked, pulling from the edges, curdled and weeping - we sent back

Yelp
PThe food here is exceptionally good. My salmon was cooked to perfection. The service was stellar. Lady was a sweet heart. The ambiance is fabulous with native art all through out the Hotel. I loved the wooden flute music at dinner. I could feel the stress roll off my shoulders. We stopped by the bar in the afternoon for beer and a nosh. Misty was great. I tried some butter squash soup . . . Delicious.

Yelp
A hidden gem. Prompt, friendly staff and a wood fireplace. We each had a breakfast, lunch, and dinner here while staying 3 nights at hotel. All meals were very good, and much more than expected at a hotel. If you are expecting hotel food, it is not that! Appetizers, steak, scallops, pork tenderloin, and southwestern items and more on the dinner menu. We had wonderful Angus burgers for lunch (they have bison too!) and eggs Benedict for breakfast.

Yelp
Nice indoor/outdoor space. The staff are really friendly and accommodating. Good food.I happened to come during happy hour (4-6pm), so the wings and cocktail were both on special.

Yelp
I love Hotel Santa Fe and everyone forgets it's there , the best kept secret in SF . Amaya has a bunch of great dishes (love the enchilada , my fav in SF) the lamb chops ! the Picaris Salad , all Yumyum ! Also the restaurant is so charming and the fireplace is always roaring ! great drinks too and the Spa is awesome! Best massage in SF !

Yelp
We visited this cafe multiple times during our stay at the Hotel Santa Fe although all of these were mostly for getting an early cup of Joe. The staff was super friendly and courteous and while there was ample seating for small and large groups, we felt that there weren't too many vegetarian options. On most days during our stay at the hotel, we mostly just tried the coffee at this place

Yelp
In the Santa Fe hotel. We were staying there. Only had dessert and breafast there. We ate the dessert, a small but good chocolate cake with ice cream, in front of the fireplace. We ate breakfast one morning. It was outrageos. Luckily we brought tea and coffee from the lobby. Small glasses of milk and orange juice were 4 dollars each. It was not stated on the menu or by our server. My wife ordered the 2 eggs however you like it for 14 dollars. Shecwas asked what meat she wanted. Surpris the chorizo was a 6 dollar charge and the cheese another 1.50. That made it 21.50 for eggs some cantaloupe and potatoes. I got a omelette and it listed items to choose from. I chose ham, bacon, sausage and veggies. The waiter said you can only have 1 meat. That cost 18 dollars. Our total bill was over 50 dollars. A total ripoff. The next day I walked acrossvthe street for breakfast.

Yelp
Our #1 favorite place for dinner. Excellent menu is exceeded only by the superb service and ambiance

Lorae M.

Yelp
I went here on my birthday because it's one of the few places that is open on Mondays. Both the service and ambiance were excellent! Unfortunately, I ordered the elk which was very tough to eat. My husband ordered chicken enchiladas which was really good and much cheaper. They gave me a free dessert, an apple tart with maple walnut ice cream. It was delicious!

JM G.

Yelp
Wonderful food and service! And live music performance in the bar that we truly enjoyed. Very nice and accommodating staff.

Olu A.

Yelp
Great food and great drinks! Stayed at Hotel Santa Fe and had two meals at Amaya. I especially enjoyed the complimentary cornbread that came out first. The margaritas were amazing and not too sweet. And chef's kiss for the scallop and poblano entrees. Highly recommend.
google avatar

Bobbi M.

Yelp
The service was just ok. The food was not as good as the meals we had prior to coming here while in Santa Fe. Best word to describe would be mediocre.

Barbara S.

Yelp
Amaya at the Hotel Santa Fe is one of the lesser known wonderful places to eat, the place is beautiful, peaceful, with lovely fireplaces and lighting. It's my favorite place to go, and I think people looking for a wonderful restaurant don't even think to go here, but it's just a beautiful, spacious place to enjoy the delicious food and atmosphere. The Hotel Santa Fe is also a favorite, it's partly owned by the Picuris Pueblo, and the artwork is glorious, and on Thursday and Saturday nights, often a native flute player plays next to the fireplace.
google avatar

Dianna S.

Yelp
Located inside the Hotel Santa Fe where we were staying, this was a very convenient place to eat late at night after a long day. First of all, we had a super friendly and excellent server! She definitely made our experience for us, nor made us feel bad for arriving late, closer to closing time. I love that! Hubby and I both had burgers with hand cut fries and tempura onions. So stinking good! Onion rings were definitely homemade - the batter was light and super crispy. Nice! We chose the chocolate lava cake with ice cream for dessert. This was a great end to the meal. Everything hit the spot! We hadn't had burgers one time during our Santa Fe stay, so this was absolutely the perfect cap to a great vacation. Hotel great, food great. Couldn't ask for anything better.

Yelp
We decided to try Amaya as a large group. It was recommended to us by one of our colleagues. So off we went, a group of 15 semi-confused adults walking from our hotel to Amaya's, which was only .8 miles away. Unfortunately, it took us much longer to get there. One can say, too many chefs in the kitchen? We finally arrived. It was a nice night, so we sat outside. They weren't expecting us - even though we "allegedly" made a reservation. They were quick to accommodate us by pushing a number of small tables together. It was fine. Again, a beautiful night. The food was ok. I had the cod, which was the favorite at the table. Again, just ok. The service was ok as well. They would not split checks, which made a few folks panicked, but not to worry, Venmo to the rescue! We had a few good laughs throughout night, which made the experience much better than one would expect. Overall a decent experience.

Yelp
My hubby had the pork tenderloin. Cooked perfectly and the polenta was a creamy and cheesy delight. He's not a fan of kale, but I am and it was sautéed to perfection. I had the soup of the day. It was a generous bowl and I enjoyed every sip. Then, for the grand finale, we shared the pear cobbler. Oh yes! So good. We will visit again.

Kim P.

Yelp
This restaurant inside Hotel Santa Fe is the best kept secret that needs to be shared! Excellent menu choices, and delicious delivery! Anyone can dinner here. Not only guests. Don't wait!

Bob F.

Yelp
Well, despite having a reservation, and you get a table in the darkest corner where they need to bring you a light...not a good start. I had to ask about our food ( hamburger, enchilada, and lamb chops). And instead of telling me she would check on it, waitress said "it's coming". Obviously didn't check on it because the lamb was cold. This could have been a problem in the kitchen not timing everything right. Service was so so, no one came to offer to refill water glasses. Maybe because our table was in a dark corner. Lamb chops were served cold. French fries were too salty. Margarita and mojito were watery. Finally got lamb and it was very good. So was the tortilla soup.

Yelp
We tried Amaya for dinner and breakfast, the patio was closed for private party, which was one of the reasons we stayed there do dine out. They were short staffed and took awhile to get our order, one of the staff had no clue what she was doing. The drinks were very good. The Green Chile Enchiladas were spicy and very tasteful, the poblano was bland and undercooked to our tasting. The breakfast was also served inside and did have better service. The burrito was very tasty. For such a beautiful place , the dining area could be made to look nicer for when they do have private parties.

Sharon G.

Yelp
The food and service was great! I love the ambience. I dine there every time I visit Santa Fe.

Judith R.

Yelp
Our favorite! Famous lamb chops (ask the chef to hold the gravy) and excellent service. Great for celebrating family birthdays.
google avatar

Chris L.

Yelp
Very nice restaurant in the Hotel Santa Fe. Good selection of sandwiches and main entrees.

Kevin R.

Yelp
Best green chili chicken enchiladas I have ever had. Service was terrific. Music by Whitefeather was great and very unique. Beautiful surroundings. Highly recommend.
google avatar

Andreas K.

Yelp
This is the wonderful inhouse restaurant of the Hotel Santa Fe. In covid times, the menu for breakfast and dinner was somewhat limited, and yet the choices were delicious. The stuffed poblano with tomato, corn, and black beans with almond chile mole was a fabulous combination of flavors and textures. The slow seared duck breast with sweet potatoes and cranberry veal reduction was simply perfect, on point and soooo tender - a divinely tasty composition. The crème brulee and the espresso completed the feast.
google avatar

Wendy K.

Yelp
This place was not as good as I expected because it was pretty normal. The service was fast but they wanted you to rush. We went to happy hour not knowing it was happy hour. It was less money but they wanted to rush you out of the lte. The bar area was much nicer
google avatar

Valerie O.

Yelp
Great ambiance and food. Always a treat in the Santa Fe area. Highly recommend to anyone looking for New Mexican food.

William E S.

Yelp
Great Chef and Service and Environment Excellent location and very accessible. Eating here you will feel and taste true Santa Fe.
google avatar

Iris I.

Yelp
I will start by saying the atmosphere is great. And the service was great until we received our food. Once our food was delivered, we did not see the waitress again for at least 20 minutes. I ordered the duck breast, cooked medium. My brother ordered the bison burger, also medium, both received well done. Having traveled all day, and we ended up eating it because we were very hungry. When I did mention it to the waitress, she didn't seem bothered. Red Chile tortilla soup- delicious, but barely warm (temp) Bison burger - adequate size. Huge pile of sweet potato fries. Ordered medium, was very well done. Duck breast with butternut squash purée, sugar snap peas, and a blueberry veal reduction. Duck was very well done (ordered medium). Squash purée was good. Sugar snap peas were very oily. Reduction was very thin with nearly zero flavor of blueberry. Apple tart tartin - was very flavorful but the crust was very tough. Sadly, just a so-so experience.
google avatar

Irma D.

Yelp
Everything was perfect. Food was divine, from tender elk ribs to the kids chicken bites. Wait staff is not hovering around, some people might say that is slow service, but everything came out when it needed to (ate in an hr and enjoyed company, not rushed at all). If the special is the ribs when you visit, ORDER it. It's like a barbacoa made in gourmet heaven.
google avatar

Jimara C.

Yelp
What can I say about this little gem... We are on a girls trip and decided to do our own Margarita trail. We ended up at Amaya. Misty, the bartender went above and beyond to accommodate us. She was so friendly and felt like one of our group. We even took a picture with her before we left. Would highly recommend Amaya, the cocktails and Misty!
google avatar

Edie M.

Yelp
The Amaya was a gorgeous restaurant inside a gorgeous hotel. It was too cold to eat outside in the tepee but they let us take pictures of it. The food was delicious and service outstanding. After dinner we sat and listened to Native American music by the fire. Definitely recommend.
google avatar

Diem P.

Yelp
Highly recommend this restaurant with fantastic happy hour menu - I think Sunday-Thursday 4:30-6:30 (call fo confirm)...appetizers are 30% off. Tried: - lamb chops appetizers: perfectly cooked lamb chops on top of polenta and side of chimichurri...finger lickin' good! Portion large enough for dinner for someone with small-medium appetite. HH pricing...Bang for the buck! - chili relleno (also HH menu) topped with green chili is also very good and very rich. Tempura battered and stuffed with corn and squash. - elk tenderloin rubbed in very nice spice. Super tender and flavorful. We got sauce on the side and didn't really use it since the rub had a great flavor. - lotsa, lotsa corn bread and French bread with butter..yum!! Service was excellent! Restaurant is part of a very nice hotel - good ambiance..quiet and laid back with nice fire place. Happy hour menu alone would earn this restaurant at 5-star

Keren W.

Yelp
Great happy hour. Cheap drinks and food (for Santa Fe) plus great service! Definitely will be back.

Yelp
To quote from the restaurant's website... "Our chefs source the best possible ingredients." This was not my experience at all. The bison burger I ordered was said to be served on a "butter brioche bun" but what was served to me looked like wonder bread right out of a plastic bag. It was not even close to brioche either. The burger itself was mediocre at best. I've honestly had much better from the likes of "In-N-Out". The server dropped off a big plastic squeeze bottle of ketchup to wash it down. One of the first ingredients listed was High-fructose corn syrup. For those who don't know, this is amongst the most unhealthy of ingredients found in processed food. It's basically poison. That being said, it's commonly found in fast-food restaurants and grocery stores. It's a bit surprising to find it in a high-end hotel restaurant though, especially one that claims to source the best possible ingredients. I asked for some mayo instead, or preferably, aioli. They brought me some single-serving packets that contained corn syrup. Mayonnaise with corn syrup. Yup. $20.00 for a #$%! burger, really?!? Never again.

James G.

Yelp
Great breakfast options. I had traditional 3 egg omelet and it was perfect. Wife had avocado toast with egg and fruit. Very good.

Joseph F.

Yelp
Looking for a quiet, spacious and beautiful place for breakfast or lunch? You can't lose at Amaya. Haven't had dinner there, but the huevos rancheros are the best in town! One time I brought a friend who had avocado toast with an egg. I wasn't very hungry, but they graciously brought me a single delicious blue corn pancake with real maple syrup. Breakfast quesadillas are huge and very good. I usually bring leftovers home. The chicken enchiladas are great and also big portions. If you want to have an actual conversation over a meal bring your guests to Amaya. The Hotel Santa Fe, where the restaurant is located, is owned and run by Native Americans from Picuris Pueblo. The artwork, weaving and background music are a special treat for your out-of-town guests. Fireplaces provide a warm place to hang out in winter. In summer the glass doors to the garden are opened so it's almost like dining outdoors. You can even reserve the tipi for a private dinner for 10. This seems weird to me since Pueblo people don't event use tipis, but I guess it's kinda fun for tourists. Highly recommended.

George K.

Yelp
It's a nice looking place, but both the food and the staff are bad beyond belief. Two of us ordered crab cakes. What came were crab cakes not only full of breading, but crazy-full of salt. Inedible. We sent them back to the kitchen. It was basically the $1 crab cake you can buy at a grocery store, but loaded full of salt. The grocery store crab cakes are not much fun, but at least they are edible; this was not. So then my partner ordered a salad with mahi, and I ordered something else. She also ordered the dressing on the side. The mahi came full of salt, while the salad came pre-dressed. The manager came out to see why we were unhappy. So we told her that not only were the original dishes ludicrously over-salted, but the replacement had excessive salt too. She tried to explain to us that "some people like it that way." That kind of excuse is totally unacceptable. But it is also unacceptable for any restaurant trying to be something better than Joe's Greasy Spoon to over-salt their dishes. We had to explain to her that customers can put salt on, but they can't take it out. Duh. What kind of a manager needs to have such basics explained to them?! What was even worse, is that instead of being apologetic, she tried to imply that she would be doing us a big favor by taking the charges for the inedible food we sent back to the kitchen off the bill! We also got attended to by the hostess. And this was scary. It appears that she is suffering from some mental health issue and interacts with the customers in a very disturbing way. Hard to describe the quality, but it was not just unpleasant but actually felt scary. I will also add that our waiter did not present an appearance concordant with an upscale restaurant. You have some expectation that at upscale establishments, the staff will present an appearance that is at least somewhat classy. Our waiter looked like a bouncer from a tough biker bar. A much better meal could be had at a Ruby Tuesday's or a Chili's. I have been to these and other similar chain restaurants, and never got a crazy-over-salted dish. I also never encountered systematically unacceptable staff. The Amaya restaurant is totally unacceptable for an upscale hotel. Guests at the Hotel Santa Fe really have to be directed to go anywhere else but there to have their meals.

Yelp
You often pay a premium for meals at hotels but the tasty fish and chips I enjoyed at Amaya ($15) was a real good value. The meal included four battered pieces of cod, a huge pile of chile fries and an ample serving of delicious coleslaw and a chile tartar sauce. Amaya's semi-enclosed patio dining room is lovely and a very relaxing setting. The menu here is varied and there's truly something for everyone's preferences.

Jan L.

Yelp
This is one of those reviews that are difficult to do, because you want to recommend them so much because of their refreshingly calm atmosphere, and yet you know that if everyone discovers them they will no longer have that ambiance! Oh well, I am going to give them a huge shout-out anyway. We were fed up with the feeding frenzy that so many of the popular restaurants in Santa Fe have become, with hour-long waits and a noise factor that ruins the goal of dining out. Low and behold, we accidentally walked into Amaya. It was everything we had hoped for. Beautiful setting, excellent service, and glorious food. We kept asking each other, "why isn't this place packed??'

Gail B.

Yelp
Lovely room, horrible service and bad food. I have eaten there dozens of times and it just keeps getting worse!
