The 38 Best Restaurants in Santiago, Chile | Eater

"When chef Carolina Bazán returned to Santiago after working in Gregory Marchand’s acclaimed Parisian bistro Frenchie, she created one of Santiago’s best French-inflected menus. The modern yet homey space, filled with plants, books, and knickknacks, is the perfect backdrop to Bazán’s market-driven riffs on French cuisine, which include pappardelle in lamb ragu and fall-off-the-bone duck confit with sweet potato puree. Ask for a table in the lush green courtyard under the crisscross of hanging bistro lights to get the full effect. Hillary Eaton" - Bill Esparza

How This Young, Fearlessly Out Chef Became the Star of Chilean Cuisine

"Ambrosia Bistro, a new venture by chef Carolina Bazán, is located on the busiest block in Santiago. The bistro, a spin-off from the more formal family-owned restaurant Ambrosia, has been operating efficiently despite being just two weeks old. The venue serves food from 12:30 p.m. into the early morning hours. The cuisine features dishes inspired by French techniques and Bazán's global travels, with a comfort in improvisation. The bistro's casual setting attracts a younger crowd and offers a variety of eclectic dishes." - Natasha Nyanin

A must-visit in Santiago for sure! We have gone to this place several times during our stay in Santiago, so tried quite a few dishes (the menu changes), and also repeated some of the dishes. The food is very very good and offers you to explore some interesting combinations. They were not serving alcohol yet during our stay in the city, but said that will soon have it on the menu. Save the space for coffee as it’s nice, and desserts are very delicious! (Especially with matcha) The service is super nice also. An extra compliment to Nicolas, who was our waiter on our first visit and since then always greeted us and came for a brief chat even when not serving our table. This really adds to the pleasant experience. The place gets quite busy on the weekends and holidays during the day (we mostly came for lunch)

Bold flavours and great dish presentation. This is by far the best culinary experience I had in Chile. Definitely a few levels above everything I tried. We went for the Omakase experience, letting the chef chose for us. The venue is also beautiful and the service very friendly and attentive. Book a seat by the kitchen to get a full experience!

Wow! The Chilean burrata with prosciutto was soooo good. There were a few flavour combinations that were so clever: the creamy clean burrata with (i) the pickled gherkin (sliced cucumber actually), (ii) the salty prosciutto and (iii) the sweet succulent miso eggplants - or what I think was miso. The pork croquettes were also good even if I thought the pork flavour was strong (and I can take strong pork flavours). The sublime peach flavoured mousse helped to mask the strong flavour somewhat though. For the mains, the chicken Caesar which was interestingly offered as a chicken thigh done confit style with anchovy, lettuce leaves and croutons. The chicken meat fell off the bones - the sous vide process did its work! What could have lifted the dish to 5 stars is if they could use crisp romaine lettuce instead of what I thought was regular green leaf which was limp. The ramen was comforting with a perfect and flavoursome hanjuku egg. What detracted from the dish was the overwhelming and heavy use of sesame oil. It crossed the line from being a fragrance enhancer to overpowering even the mighty kimchi which became lost. Presentation wise, it would have been great to be able to see the noodles and ingredients. Finally the torta rocher for dessert was a great study of textures. The flaky crust worked with the brittle crunchiness of the pralines. Taste wise it was sweet for me - best to have this with a bitter coffee or a clean tasting tea.

Dinner was absolutely amazing. The shaven foie gras dish was to die for. We sat at the kitchen counter and seeing the chefs work was a great experience. We also had the duck and the flavor combinations was amazing. Truly a great experience. We came here partly after seeing Feed Phil on Netflix but it's trully worth a visit. Especially at the new location at MUT (which is also worth visiting by itself). Keep in mind that reservations are highly recommended especially for dinner.

One of my favorite restaurants in Santiago de Chile. Every time I visit, it’s a must on my trip. The chef and owner, Carolina, is very kind, always present, and happy to give recommendations. The staff is great at explaining the ingredients and how each dish is prepared

Similar to the restaurant, visited because of the book Chef Wise. The ambience is amazing. With great view of the Andes in the background reflected on the mirroring walls. Chic concept. Good service. Food ok, better than the ambrosia restaurant but not mind blowing. The mall this restaurant is located, MUT is AWESOME though.

A Santiago must visit. I’ve been twice and cannot recommend this spot enough. I’m a sucker for an open kitchen, watching the chefs interact, tinker, refine, season, dice, joke around and plate-up is pure poetry in motion. Arrive early for the Mise en place matinee. The service is unusually warm and engaging for Santiago standards. Views of the busy streets bellow and a menu incorporating accessible familiar favourite elements with creative and progressive spins. I hope to visit this restaurant many more times.
