Things like masala eggs, desi omelette, and boiled egg kheema all feature on the menu and, as far as nourishing egg and bread combos go, you can’t do much better than the egg tikhari. This sloppy dish from Surat in India features still-runny fried eggs, a lightly spiced red chilli gravy, alongside welcome bites of garlic, ginger, and coriander.
