"Every one of the 20-or-so dishes at Anda House, a vendor in Trader Wembley food court, features an egg, one way or another, combined with Gujarati spicing and sides. Things like masala eggs, desi omelette, and boiled egg kheema all feature on the menu and, as far as nourishing egg and bread combos go, you can’t do much better than the egg tikhari. This sloppy dish from Surat in India features still-runny fried eggs, a lightly spiced red chilli gravy, alongside welcome bites of garlic, ginger, and coriander. Scoop, pile, and mop up with fluffy bread buns provided and be on your way.
