Aries' Noodle And Dumpling replaces the recently closed Sushi Box across from Waltham Common. They are currently in their soft opening according to the Waltham Patch:

The interior looks only slightly remodeled from the previous restaurant. A very short menu, highlighting at the top the Chefs Special of "Lan Zhou" hand-pulled noodles, essentially lamian beef noodle soup, so I ordered that ($12.99). A large, flat bowl of thinly sliced beef, moderately chewy noodles (about double the thickness of spaghetti), and a small amount of vegetables in a beef broth. Although it was pleasant on a cold day, I could have gone for more vegetables. However, I'm not an expert on lamian noodles, so I'll leave it for others to comment on how representative it is.
Interestingly, there is a large metal counter in the front window, so it looks like they may be setting up to eventually do the noddle pulling in view of the customers, like you might see in Flushing NY.
The menu also has a variety of dumplings and I tried some of the pan-fried pork ones (6 for $4.99), which were of the open-ended variety your rarely see. Definitely tasty and well-fried.
Asked for a Diet Coke, but they don't have any diet soft drinks.
Service was pleasant and reasonably quick, although I was there very early and there were only a handful of customers. There is easy parking in the small city lot next door (depending on time of day) for $1.25 for 2 hours by PayByPhone.
