We walked into a brown bar in Amsterdam because we really wanted to know what all the hype was about these "brown" bars. While drinking our beers in the U.S. equivalent of a dive bar, a couple from England walks in and we start chatting them up because everyone else there speaks Dutch, and being from America and all we're too egotistic to speak any other language other than English. Same with the British I guess, hence why we got along immediately. Not too far into our conversation we start talking about food and they bring up the "amazing" French restaurant next door that just opened up. The woman, who actually turned out to be French, has a nephew that started as a chef there, and the couple could not stop raving about their awesome nephew and how amazing the food was at this restaurant.
"Arles!" she exclaimed. "It's where I'm from. South of France. That's the name of the restaurant. You must try it."
They would not let up on how amazing the food was and how badly they wanted us to try it. They had apparently been visiting their nephew in Amsterdam on a weekend trip. About half an hour later her nephew walks in through the door, apparently on a break or not working at the restaurant at the time. We met him - quite the authentic Frenchman.
Admittedly, we were skeptical. On one hand they were British (so who were they to know about good food?), but on the other she was French - as were her nephew and the restaurant - the pinnacle of great cuisine. It was a toss up.
We went home, contemplating it, but not too seriously. The restaurant happened to be right around the corner from the brown bar and where we were staying and, given how cold it was for the winter, it seemed pretty appealing to just be able to walk down the street for dinner. We checked the prices online and a 3 course meal will run you 34 euros, or around $35 at the time of writing this. Our curiosity and the excellent prices for a 3-course meal was what tipped us over from "maybe we'll try it" to "yes, let's give it a shot".
I am SO glad we did. It was honestly the best meal we had in Amsterdam and for the quality of food and presentation it was a STEAL for the price.
Bonuses:
- They give you free still water.
- The bread and butter is actually really good. (Embarrassingly, for 3 people we ate a total of 3 baskets of bread.)
- Every dish we had was really good, if not amazing. The presentation was way more than you'd ask for for $35.
- 3-courses is plenty filling.
- They really like their foam on the dishes. I do too.
- The favorite dishes of the night was the pork belly and raw oysters (prepared with great flavors I have never had with oysters)!
I wish we had another night to go back to this restaurant. It's casual enough to go here as a regular night out, and the servers were really friendly and helpful, too. If I'm back in Amsterdam, I will definitely be eating here again.

Tip: Make a reservation. They seem rather busy, even on weeknights.
