Co-owner George Johnson learned to make his crispy pan pizzas at the award-winning Detroit Style Pizza Company, and it shows: In an industrial brewery space with outdoor picnic tables, servers deliver crispy, chewy, soft pizzas with tons of crispy baked-on cheese to neighborhood locals and pizza nerds. "There are a surprising number of Detroit-style pizzas in Portland—you could easily eat a different version every day of the week—but the original Assembly Brewing in Foster-Powell nails its rectangular pies. The generous amount of Wisconsin brick cheese laid down before the sauce and toppings, bubbles, chars, and fuses to the dough, while the fat seeps down and creates a fried texture to the bottom of the crust. They’re mostly variations on the standard toppings, except for The D, which places pepperoni under the cheese and includes canadian bacon, green peppers, mushrooms, and onions.
