New Austin Food Truck Atlas Sandwich Company Opens With Greek Sandwiches | Eater Austin
"Run by Joey Polychronis, this new Greek-focused food truck blends family recipes and Mediterranean flavors with classic and modern sandwiches. Drawing on his family’s roots in Sparta, a slow-roasted lamb made from the family recipe anchors many offerings: the Atlas, a gyro-inspired sandwich with slow-roasted lamb, smashed lemon potatoes, tzatziki, tomato, and red onion; the Spartan, with lamb, spicy whipped feta, shredded green cabbage, and tomato; and the Greek Freak, a grilled-cheese riff pairing saganaki with Calabrian chili–infused honey and slow-roasted lamb. The menu also includes Italian-style hoagies like the Corleone (soppressata, mortadella di pistacchi, prosciutto di parma, provolone, shredded lettuce, tomato, extra-virgin olive oil, and balsamic) and the Soprano (soppressata, mortadella di pistacchi, hot capocollo, manouri cheese, roasted red peppers, and caper chimichurri), plus vegetarian choices such as the popular Athena with whipped ricotta, grilled eggplant, roasted red peppers, and arugula. Opened in March and relocated late June, the truck serves lunch 11 a.m.–3 p.m. Tuesday through Saturday; orders may be placed in person or online with Favor delivery available, and the owner plans to expand into Greek-inspired grab-and-go breakfast sandwiches." - Courtney E.
