Disclaimer: this was my first time eating at Amazon Steaks and Pizza. I was so impressed with the fries that I will try them again.
Alrighty. The cheesesteak is fine, but certainly nothing to write home about. It's a straight up middle of the road cheesesteak. The cheese wasn't cut into the steak, which would have helped to remedy the dryness of the beef, and a little salt and pepper would have helped the overall flavor. The roll was quite good. Sturdy with a bit of give when you bite into it, and a nice texture without being overly soft.
The fries on the other hand, were a work of art. These are honestly some of the best fries that I've had anywhere. Seriously. They were golden in color, and crispy without being over cooked. The center was soft and provided a nice contrast to the slight crunch of the exterior. There was not a hint of excess grease, so much so that there was no oily residue on the bag that they came in. All of this was observed after a 15 minute walk home. Most fries would become soggy in this time, especially given the temperatures that we have had in Philly.
I don't know what sort of wizard they have working the fryer, but they obviously know what they are doing. I can only imagine that they have an almost savant-like understanding of cooking time, oil temperature, and how to pre-soak the potatoes, along with a certain innate feel for how to make fries correctly. The fries that I ordered were perfect in every way. The person who made them deserves a raise, and a statue erected in their honor. They should give seminars on the topic, or perhaps found an institute. At the very least, they should open a small takeout window and sell only fries. This is all to say, that I can't imagine that getting these fries so incredibly right was a fluke.
