Former San Francisco Restaurant Reclaims Michelin Star in Edinburgh | Eater SF

"When a one-Michelin-starred restaurant closed its Fillmore District location at the end of 2023, chef Rodney Wages relocated his fine-dining outfit and his family to Edinburgh; the timing of the reopening meant the restaurant was not initially qualified for Michelin consideration in the United Kingdom. Glasgow World reports the restaurant has re-earned its Michelin star just over a year after the move, with Wages winning a star in a second country at the Michelin Guide Ceremony Great Britain & Ireland 2025—clear evidence that the gamble paid off for the chef. The simple new restaurant, located one story below ground on an otherwise unremarkable street in the capital city, presents the right atmosphere for the dishes Michelin praised, including Orkney scallop with pineapple jus. The Kansas native hasn’t forgotten where he cut his teeth, though: a huge painting of Godzilla taking the Golden Gate Bridge by storm hangs on the wall. The new entry in the guide reads in part: "Rodney has wholly embraced his Scottish surroundings, taking the country’s bountiful produce and treating it with a Californian lightness, while providing bold, distinct flavours." - Paolo Bicchieri

Avery offers a refined, intimate dining experience with personalized service that reflects its Michelin-star status. I went with the upgraded tasting menu—beautifully presented and technically sound, though not quite unforgettable. The wine pairing didn’t suit my palate, but the 50-year whiskey was a highlight. Overall, a pleasant evening with thoughtful touches, but it didn’t make my top five.

This is one of the most unique, exquisite tasting menus I’ve ever had. The tomato martini is one of the most delicious and adventurous drinks I have ever tasted, and that was just to start. Every dish was phenomenal; my ultimate favorite was the mussels and greens in the coconut broth. The end of the meal into dessert was also nothing short of perfect. Our experience was stellar.

Absolutely blown away by our experience at Avery. The entire evening was run by a small but incredible five-person team who cooked, served, and poured their passion into every detail. Chef Rodney is unbelievably creative – each course on the set menu was a masterpiece, both in flavor and presentation. By the end, we were completely speechless. An unforgettable dining experience and easily one of the best meals we’ve ever had.

Avery gives you taste buds. The food is so delicious, one can’t describe it by simply mentioning ingredients like eel, venison or totellini. They just don’t taste the same anywhere else I’ve tried. Avery has no benchmark of reference, other than Avery itself. The food is lively, fun, succulent and just delicious. Presentation beautiful! The wine kept pace and the cost didn’t even do serious damage, as compared to the world’s top tier of restaurants. I chose a 2016 Brunello for a reasonable sub £300 price tag and it turned out to be a smooth accompaniment with a hugging texture and some elegant cherry. The welcome glass of Grand Cru Champagne and the 50 years old private label whiskey put a content smile on my face. We were so happy to have finally come here! Experiencing the concept in person has left a lasting impression on us. I would not hesitate to make the aviatic journey again. Even my sister who spent weeks touring Scotland said that this was by far her favourite tasting experience. Many other destinations have missed out on chef Rodney Wages; beloved Scotland is fortunate to have his American energy and hospitality, bringing in fans from across the seas and elevating the culinary scene. And the appreciation seems to be mutual - you can read more in “Why Avery's MICHELIN Star Move is the Restaurant Story of the Year”. I remember a local taxi driver being excited about the chef back in 2023, almost a year before the restaurant even opened. My apologies to the kind young lady waiting for my departure, delayed by my tardy arrival and the tight availability of tables during this high season.
