I've walked into many BBQ spots in Texas, from Gainesville, to as far south as Arroyo City, and this place is one that has been marked on my map as a, "MUST TRY".
B4 Barbeque is tucked inside a little feed store in the small town of Mabank, TX. We will get to the food shortly.. but the location itself is beautiful. A very clean, modern rustic look. The cleanliness and friendly smiles alone make the experience here, very nice.
The food.. well, the food it truly out of this world. This barbecue is masterfully prepared by owner Nolan, his wife, and his crew. Not only is Nolan a talented pit master, but the guy has the most amazing attitude. As I enjoyed my delicious meal, he walked around greeting the customers, and offering a firm handshake and a smile. You can tell that he has an honest love for the craft.
I had the pleasure of trying the very much hyped, Pastrami Brisket.. and Oh my goodness.. It's so tender, and absolutely full of flavor. Hands down, some of the BEST brisket I've ever had, and that no exaggeration. Smoked to perfection, with a mesmerizing red color all the way through from the marinating process and skillful smoke.
The Texas Twinkies, a staple in Texas BBQ, were big, appropriately, and packed a nice kick along with a creamy, meaty center.
The Meat Candy, boy... I tell you I'd trade real candy for this, for the rest of my life! These little flavor bombs are another highlight of the meal. Smokey, sweet, and tender as can be, topped with a dusting of brown sugar. Highly recommended.
The sausage, made in house, like the rest of it, packs some nice heat, and has a beautiful snap, as expected from any quality sausage. Well balanced mix of meat, with just the right amount of lean to fat. This kind of sausage takes years to master, and at B4 Barbecue, it is done right.
..BUT, let's not forget the sides. Normally, side items are an afterthought, but here, they play as big a role as any other part of the meal. I mean, when I say you can see the love in the way they prepare the food, just look at pictures on their social media. Everything is so beautifully plated. A real treat to the eyes right away.
The take on Mexican street style corn is a delight to the palate. Seasoned corn, crema, green sauce, cilantro, lime.. all workin together in perfect balance, for an insane bite.
The Mac and Cheese, creamy, cheesy, with a good consistency. I love that it doesn't fall off my spoon when I scoop it up, like many liquidity Mac and cheeses at other restaurants. You can get a nice grouping of macaroni, and it holds nicely. The flavor is rich and savory. Fantastic.
Even the sliced bread, you can tell is quality and soft.. and as a pickle lover, when I asked for extra, there was no hesitation, and I was pleasantly surprised to find a heaping pile of them on my tray. Also made in house, if I'm not mistaken, the pickles are crunchy, tangy, and accompany the food very well.
I can tell you now, there is no stopping this spot. I am not surprised to find out that folks are already coming around from all over the place to try it.
