I was genuinely happy when they opened in Hudson. What truly sets Baba Louie’s apart is their organic sourdough pizza crust—it’s exceptional. You can taste the quality and care in every bite. The ingredients are fresh, thoughtfully sourced, and consistently delicious. Full transparency: my son works here as a busboy, but that only reinforces my respect for this place. I see firsthand how well the staff is treated and how much pride goes into the food and the work environment. It’s a place with integrity, from the kitchen to the dining room. This is not your ordinary pizza place. The pizza that is served here is of a much higher quality. We had the margherita pizza with pepperoni. It was a masterful blend of simple, balanced and flavorful ingredients. The golden-brown thin crust was crispy on the outside, yet tender on the inside. The sauce was bright and fresh and did not overwhelm the other flavors of the pizza. The pepperoni slices were big, smoky and slightly spicy and tangy. And who can forget the marvelous cheese? It had a delightful chewiness that melted in my mouth with each incredible bite. We also shared the caesar salad which was fresh and delicious and had mouth watering crunchy croutons. For dessert we had the brownie sandwich. This too was a sweet refreshing treat which was perfect for sharing. If you want top-notch pizza, this is the place to go.

Went to Hudson for our anniversary weekend and ended up eating here for lunch. It was very busy and only three waiters but we managed to get a seat at the bar. Sabrina took great care of us and was friendly and helpful despite the hectic work! The Caesar salad was huge and the pizza was great! Would definitely go back. Wish I had photos to share but we ate the food too fast lol

This was such a lovely experience as my first time eating in Hudson, after our move from wappingers. Growing up there, we knew all the best local spots, Baba Louie’s felt like home with a warm atmosphere and delicious food!! The nachos were AMAZING! We will definitely be back.

Closing time is at 8pm on Sundays, my Husband and I went in at 7:36p. The host asked me to wait, then asked the manager where to sit myself and my husband. The manager came out and told her employee in a clipped and short tone that we could not be sat at a table because it was too close to closing time and if we wanted to order, we'd have to do take-out. She never even talked to us even though we were right there. The manager also stated that there were "No tables clear" when there were 2 tables completely open (see below pictures), and other patrons had just told us that they were just sat at a table. 24 minutes before the marked closing at a normal dinner hour should not equate to business being turned away in the first place, let alone in such a blatantly rude and passive-aggressive way. Being gay, my Husband and I are used to being discriminated against, but not when the business is flying a pride flag on its door and states that it's LGBTQ+ friendly. Would absolutely not recommend to our LGBTQ+ friends and allies in this area.

August 2024: The pizzas are terrific. The crust is one of the best thin crust, creative topics. This time we ordered a take out, it was ready on time. We are right outside as there are many tables along the streets to be used by all local establishments. very nice!

We got a pizza for take out, we arrived early and one of the young women waitresses was so kind and told us to sit at the bar while we wait and she offered us water. Little did she know that we had been hiking all day and that kind gesture was so appreciated! The atmosphere inside was so cozy, exactly what you’d want from an Italian restaurant. The pizza was absolutely incredible, the ingredients all tasted extremely fresh, and that sourdough crust was just amazing. Coming from Jersey, this goes a long way!

We stopped here shortly after they opened for the day and was able to grab a spot pretty quickly. We got half of two pizzas - Melanzana Cardinale and Isabella Pizzarella. Both were delicious, but the star was Melanzana. The smoked gouda with the eggplant - wow wow wow. You gotta try it. Two halfs were more than enough for myself and partner, and I definitely recommend coming here for a quick bite!
