Bib of the Month: Baca’v, Paris

"Crossing the threshold, I feel like I’m arriving at a friend’s place, with bistronomy recipes and hearty dishes to mop up without restraint, set by a welcoming promise on the door: "As long as the lights are on, you can eat and drink." Its name blends baca (to eat in the Limousin dialect) and cave, signaling a cave à manger run by Chef Émile Cotte, an alumnus of Drouant and Les 110 de Taillevent, who opened it around 40 to serve sincere, generous bistro cooking. The menu champions producers from Cotte’s home region of Limousin in unpretentious plates and sharing dishes rooted in time-honoured French tradition; the house specialty is indisputably the pâte en croûte. Great value comes via a €41 set menu served at both lunch and dinner, and seasonality drives the table: autumn brings scallops, game, and hare à la royale; winter turns to truffles; spring to asparagus, with weekend deliveries arriving straight from those producers." - The MICHELIN Guide

"Indulgence and good wine: Gilles Choukroun has taken his friend Émile Cotte's motto and made it his own! In the lively atmosphere of a Parisian bistro, he serves up his generous take on hearty bistro classics: marinated herring and potato salad; calf's head, tongue and brains in sauce ravigote; floating island with praline and crème anglaise… Appealing menu-carte on the blackboard." - Michelin Inspector

Bib of the Month: Baca’v, Paris

"Chef Émile Cotte, a graduate of the kitchens of Drouant and Les 110 de Taillevent, decided at around 40 to open a restaurant where he could feed his guests sincere and generous bistro cuisine. We had such a great meal at this Michelin Bib Gourmand bistro! We actually arrived about half an hour earlier than our reservation and fully expected to wait, but to our pleasant surprise, they seated us right away — and at the best corner table no less. A good start always sets the tone. The staff greeted us warmly and took our drink orders right away. The menu was presented on a chalkboard, in true French bistro fashion, and we kept it at our table while deciding. The restaurant was already buzzing — every table full, diners chatting, glasses clinking, the kind of energy that makes you instantly hungry. To start, we shared sardines, terrine, and escargots en persillade, all flavorful and perfectly prepared. For mains, we ordered the rabbit and beef stew, and I had my heart set on the côte de boeuf to share with my husband — but sadly, they were sold out. We went with the onglet de boeuf instead, and while it wasn’t quite as tender as I’d hoped (it’s a tougher cut, after all), the flavor was spot on. For dessert, we shared a puff pastry with ice cream drizzled with hot chocolate sauce, and it was the perfect sweet finish. Service was friendly and lighthearted — the staff joked with us, offered to take our photo outside, and even the manager (or maybe owner?) playfully posed in the background through the window. Such a fun and welcoming touch. The whole experience was cozy, unpretentious, and thoroughly satisfying. With drinks, the total came to about USD $260, and for the quality and atmosphere, it felt like a real bargain. Highly recommend if you’re looking for a true French bistro experience done right.

We were looking for traditional bistro fare and found this spot near our hotel through the Michelin Guide. From the moment we walked in, it felt noticeably different from the more well-known, touristy places we’ve tried around Paris. The staff were attentive and genuinely warm. The food was high quality. Our entrées - the pork terrine and the lentil and smoked salmon salad were outstanding. For mains, I ordered the poulet basquaise and my partner had the special of the day - sausage with mashed potatoes. He loved his dish. My chicken was well executed, but the tomato-based preparation wasn’t to my personal taste (completely on me for not knowing what “basquaise” entails). We finished by sharing the Pruneaux à l’Armagnac with vanilla ice cream, served in a delicate champagne glass. It felt like an elevated Armagnac float, with richly soaked prunes at the bottom. The overall experience was refined, traditional, and classy without feeling pretentious. Prices were also reasonable. We also appreciated the location - set in what appears to be a residential neighborhood and an easy walk to the Jardin des Plantes, where we enjoyed a stroll after our meal.

Baca’V completely lived up to the reviews; everything from the atmosphere to the food felt genuine and thoughtful. We had the crème chaude de potimarron servie en soupière (a warm pumpkin soup poured at the table), the terrine de campagne “tout cochon”, boeuf/carottes confit au vin en cocotte, and the parmentier de boudin noir et pieds de porc. Every dish was cooked perfectly, full of flavor, and beautifully presented. The profiteroles were the perfect ending!! Crisp choux, vanilla ice cream, and warm chocolate sauce poured at the table. The service was very professional, kind and relaxed. The whole place has that cozy, local bistro feel that makes you want to stay for hours. Definitely a spot I’d come back to!!

I'm very impressed by the service, the best service I've found in Paris. I've found that the waiters are adept at British humour. I was given the best seats with excellent protection because I was late to the booking. The food are excellent, well seasoned escargot, rich beef bourguignon and crispy rice pudding. The wine choice is also very great, nice fruity red and the waiters have generally gifted me the rest of the small bottle. Definitely recommend!

Great service and fantastic food! It was such a pleasure to enjoy lunch at this Bib Gourmand Michelin restaurant. The team was incredibly thoughtful, making sure the wine was served at the perfect temperature and even timing everything so we wouldn’t be late for our flight. Truly impressive hospitality and a memorable meal!

Truly a beautiful experience. The staff was very kind and took the time to explain the menu and guide us in the right direction. The food is incredible, Les escargots are one of the best in Paris. The fois gras melts in your mouth and is on a creative bed of celery. Everything was so delicious, a hidden gem! Compliments to the chef

This was one of the best meals we had during our time in Paris and though it s a bit off the beaten path, I’d highly recommend coming here. A friend recommended this spot and it’s also featured on the Michelin Guide. Our writer was also so funny and helpful. We shared the young chicken, pork terrine, and pate feuillité among the four of us and every single dish was so delicious and well made. The sauce of the chicken was so flavorful, the terrine was rich and hearty, and the choux pastry was fluffy and buttery. Indoor and outdoor seating available.

The restaurant known for its traditional dishes, is recommended by the Michelin Guide. Their menu changes daily, and the starters, main courses, and desserts are all delicious. The service is also excellent. Although the menu is only in French with no English but the staff can communicate in English. If you’re in Paris, it’s definitely worth a try but it’s best to book a table in advance.
