For instance, the Blind Swine (developed when owners Jesse Spring and Keaton Cooper were at the also-excellent Jarr Bar) is an upgrade on a dirty martini, with vodka, piparras pepper brine and a chorizo-wrapped piparras pepper. But for something outside of the canon, try the Beets by K, an enticingly herbal, earthy concoction featuring gin, roasted beet and blood orange simple syrup, lemon, and celery bitters. Kind of like a Dick’s deluxe but a hundred times better, it comes with lots of shredded iceberg, a garlicky pepper-specked burger sauce, and a blanket of melted american so thick that you almost lose the patty, complete with a crusty outer lace and pink center. "Your Order: Burger And Fries ($16.50) Some smashburgers are just a little snack. But the patties at this Pioneer Square bar are sizable. They’re also pressed, not WWE slammed—which means you’ll get a nice crust while the middle manages to stay a little thick with a pink tint. There’s a slick coating of garlicky pepper-specked burger sauce, a confetti pile of crisp shredded iceberg, and a tasty blanket of american so thick that you almost lose sight of the patty. "If you were to peek through the window at Bad Bishop, you’d be able to make out Victorian wallpaper, a piano, and general darkness. Kind of seems like it’d be a scene in a late ’50s noir film that definitely would not pass the Bechdel test. In reality, people in here are playing Scrabble, eating corn dogs, and drinking hot toddies from corny office mugs.
