My SO and I decided to eat at Bamboo Sushi on a Friday evening after picking up a few items at the mall. It was conveniently located right outside of the Apple Store.

Modern, clean, and warm aesthetics.
WAIT/RESERVATION
Upon arrival at the host stand, we put our names on the waitlist since we didn't have a reservation. We didn't, so the wait was 30 minutes, albeit looking around, there were plenty of open tables inside. Patrons occupied the bar area and outdoor seating. It was the same when we returned after receiving a text to be seated; plenty of indoor tables vacant.
SERVICE
It was a miss for us during our first visit. We were seated quickly after returning with a text that our table was ready. We waited for a good 10 minutes before being helped. No check-ins during the entirety at the restaurant if everything was okay, nor were our drinks asked to be refilled. We had to wave down another waiter for a drink refill and asked for the check at the end. Unfortunately, this has got to be one of the worst customer services we've had in a while, especially for a restaurant that prides itself in quality and elevated fares, which needs exceptional customer service for the experience. For this reason, I deducted one full star.
FOOD
Bamboo Sushi is the world's first certified sustainable sushi restaurant, which is fantastic. They contribute 1% of annual sales to support environmental nonprofits. I love the mission.
The food was tasty and eclectic. As advertised, it's flavor-forward and vibrant.
*Spicy Edamame (steamed, chili garlic crunch, tamari, togarashi): we ordered this as an app, which was delectable.
*The Unicorn (spicy crab, shrimp tempura, albacore, avocado, jalapeno dressing, gochugaru oil, micro cilantro): this was our favorite out of the two rolls we ordered. Fresh ingredients and tasty. Well-balanced. We enjoyed the jalapeno dressing.
*Full Circle (spicy albacore, tempura fried green onions, seared tuna, watercress, crispy onions, citrus ginger dressing): this roll was okay. It has potential but didn't quite come together. The watercress and crispy onions should be on top or inside the roll for a better bite. I had to chopstick the watercress and crispy onions to go with the roll.
Overall, Bamboo Sushi is worth a visit if you're ever in the area. It may not be for everyone since their signature sushi rolls have a modern take on the flavor profile. We enjoyed trying it out. They have more items on the menu, such as Sashimi, Nigiri, tons of Appetizers, Small Plates such as Chicken Karrage and Shishito Peppers, Crispy Rice entrees, and Kitchen Specials like a Wagyu Burger or Spicy Seaweed Fried Rice.
