"A new aperitivo-focused bar from the owner of a Roman-inspired trattoria opens on June 26, offering spritz-forward cocktails, Italian wines by the glass, zero-proof drinks, and a lineup of small Italian snacks and pizzas. Signature drinks include a Two-Kiss Spritz that swaps cappelletti for Aperol, the Sofia with fizzy chinotto, lambrusco and port, a Quasi-White Negroni, and a shakerato with espresso and orgeat. The spuntini menu highlights olives tossed with anise, orange peel and bay leaf; peppers stuffed with tuna, capers and anchovy; thin focaccia di Recco with stracchino; cannellini beans in a rich tomato sauce; gnocco fritto topped with cured meat; chilled octopus; and beef and pork meatballs. Pizzas—moving over from the owner’s trattoria—sit between Roman and Neapolitan styles, including puffy-crusted funghi, margherita, and meat-topped pies. The interior has been refreshed in rich greens with a stone bar resembling a slab of mortadella accented by pink and pistachio tones, retains cozy natural wood frames, features a gleaming vintage espresso machine, and offers a dog-friendly patio. "The good light has found Bacetti in Echo Park. Here rich golden wood plays against rust-toned tile and more vibrant touches like deeper reds and darker greens, all interspersed with plants and shadows for a bit of pop and splash. Really, though, the pared-back rooms glow because of the late-fall light that streams in from above, exposing the open ceiling and extensive glasswork near the kitchen (which slings pizzas; pastas; and main plates like duck confit, braised lamb shank, and branzino). A thick marble countertop, streaked in ink blacks and grays, buffers the separate-but-touching spaces. "This ode to Rome is a love letter to gorgeous architecture and rich pasta, like the campanelle with chanterelle mushrooms. Find plush focaccia ebraica dotted with olives, currants, and rosemary on the menu, which pairs well with a glass of wine off the extensive menu. Larger dishes include pizza, branzino, rigatoni with Amatriciana, and bistecca.
