Fresh, airy, and savory churros paired with perfectly balanced chocolate.
After weeks of traveling across Spain and trying churrerias in every city, I had to taste the churros of Seville where I stayed for a month. El Comercio was the first place I tried. The location is central, but hours do not follow those listed online. I visited three times before finding it open. Call ahead if you do not want to be disappointed! But after my first visit, I came back another four times during my month-stay in Seville; after trying the other churrerias, el Comercio was my favorite.
The décor evokes historical Sevillana. Past the long bar corridor is a quaint room lined with blue and white ceramic and dark wood furniture. In the corner, the churros chef guides the mix to form a spiral in the frying oil, and waits for a golden brown. Order and pay at the bar, get a table, and pick up your hot fresh plate of churros when the chef calls you over.
We usually order one chocolate to share between two servings of churros. For dipping, the ratio suffices. But I can see myself ordering another chocolate on a brisk winter's day.
The churros are fried to perfection - hot, crispy and brown on the outside, airy and slightly chewy on the inside. They are savory and flavorful. The chocolate is rich and smooth - not too sweet and not too bitter; viscous enough to dip, thin enough to drink. Under-fried or stale churros imparts a plastic aftertaste. These churros only leave you with happy childhood memories.
Oh, and freshly squeezed orange juice is available!
