"Here’s a “brunch if you hate brunch” plan: go get barbacoa. The pit-roasted meat dish, usually made with lamb or goat, is famously labor-intensive (seriously, watch an episode of Taco Chronicles on Netflix) and the best LA vendors often sell it only on weekend mornings. Barbacoa Estilo Taxco—a veteran sit-down operation that sets up from 7am-2pm Saturdays and Sundays under a big tent in South LA—is one of those places, and like cartoons to a six-year-old, is worth getting up early for. The signature here is Guerrero-style roasted lamb (sold by the pound or as tacos) rubbed generously with adobo and served with a side of heady lamb consommé. The barbacoa is velvety soft and tender, exceptional on its own but somehow even better as a taco, wrapped in a fresh-pressed tortilla and dabbed with chunky salsa verde. MÉXICO (Guerrero) 🇲🇽 Excerpt from Eat the World Los Angeles: While you are standing in line waiting for your chance to order this goat and lamb barbacoa, listen to the conversations of others around you, or if you do not speak Spanish start one yourself. It becomes clear that the vast majority of customers here live in nearby neighborhoods of South and Southeast Los Angeles but originally come from Guerrero. The food and adobo-rubbed Guerrero-style barbacoa they remember is best represented here under the large yellow tent. The stand has lived for over a decade, the tent was once white and much smaller, but now the current one becomes a sight that makes your heart speed up in anticipation of the upcoming meal. Barbacoa can be thrown on any menu, usually resulting in a plate of dry meat laid in front of you, but it takes someone talented and willing to put in the hard work of properly cleaning an animal and cooking it overnight to make the best. After finishing you can start to appreciate the origin stories of this food and the family that serves it. On the business card, a beautiful scene of Taxco shows the main cathedral and the mountains that surround the Northern Guerrero town. It is quite a bit closer to Mexico City than it is to the coastal Guerrero city of Acapulco, and shares a culture similar to the mountainous towns of nearby Estado de México, Morelos, and Puebla, places that have all seen quite a dramatic loss of families that have moved their lives north. It is an honor and a privilege to share meals with those that have come to Los Angeles, and the amazing yellow-tented food stand that fulfills their cravings from back home.

Damn good barbacoa. Good idea to carry cash on you but was able to venmo for the meal. Worth the drive from Santa Monica for sure.

Barbacoa (goat) was so tender and delicious. Husband liked the beria (lamb). Service was great and folks there were very friendly. They have two kinds of onions, salsa verde and Rojo as well as limes to dress the tacos. The barbacoa is deliciously gamey. Tortillas are made fresh on site. It’s the best barbacoa I’ve had and I travel is Mexico a lot and LOVE goat.

It had maggots! Smelled like gross, my parents bought some and I had to drive back to return it. It’s supposed to be lamb but it’s not fresh and smells like wet clothes that you forgot to dry. La barbacoa tenia gusanos y huele a ropa mojada. Olor terrible tuve que irr a regresarla.
